Most whole grain recipes call for whole wheat flour. But I have come to notice kids don't like the taste. So I began to experiment with other whole grains. I found that substituting 1/2 whole grain barley and 1/2 whole grain oat made a nice consistency and tasted better. Also for those dairy sensitive people, depending on the recipe, apple juice or soy milk serves as a good substitute. And we came up with some recipes even your kids will like!
Dairy Free Whole Grain Banana Bread
Ingredients
2/3 cups sugar
1 cup whole grain oat flour
1/3 cup canola oil
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
2 eggs
3 tablespoons soy milk
5 very ripe mashed bananas
Optional 1/2 cup chopped unsalted nuts
Instructions
1. mix all dry ingredients, (make sure to crush all lumps from the oat flour)
2. make a well in the center and add all wet ingredients mix well as you pour in liquid ingredients.
3. let stand at room temp for 20 minutes before baking
4. pour into well greased large loaf pan
4. bake for 1 hour in a preheated oven at 350 degrees

Please reconsider the liquid in the WHOLE GRAIN BANANA BREAD ...not using soy milk and use rice milk instead as it it a healthier choice. Soy has been found not to be as healthy as once thought.

They like it just fine if they grow up eating and seeing their parents eat it! I love whole wheat, and so do my kids.
