Sugar-Free Jam

Try this one and let me know how it works for you.


  • 2 Tablespoons lemon juice
  • 2 Tablespoons water
  • 2 cups fresh strawberries, or fruit of your choice, washed & diced (OU strawberry statement)
  • Sugar substitute to equal 1 cup sugar
  • 1 envelope unflavored gelatin
  • 1-1/2 teaspoon cornstarch


  1. Combine lemon juice, water, gelatin and cornstarch in a saucepan
  2. Heat slowly, stirring constantly, until gelatin and cornstarch dissolves
  3. Add fruit to gelatin mixture
  4. Heat to boiling point over low heat, stirring constantly
  5. Add berries and boil 3 minutes. (Other fruit may take longer.)
  6. Remove from heat and add sugar substitute
  7. Pour into heat proof jars and cover
  8. Let set at room temperature until cooled
  9. Store in refrigerator or freeze
