The “eighth day” of Sukkot, in which the Mitzvot of Sukkot are withdrawn, and the seventy sacrifices corresponding to the “Seventy Nations” have already been brought. Only one sacrifice remains to be brought. And there is only one Mitzvah left, namely, to rejoice together with Hashem. In Israel, Simchat Torah is combined with Shmini Atzeret.
