See below for tantalizing recipes the whole family can enjoy!<\/p>\n<p>Starting with Dessert \u2013 Fruity 4th Popsicles<\/p>\n<p>Have a side..or two \u2013 Sweet potato fries &amp; Zucchini fries<\/p>\n<p>Main dish \u2013 fresh salmon with avocado mango topping<\/p>\n<p>Fruit Fun 4th Popsicles!<\/p>\n<p><a href=\"https:\/\/www.ou.org\/life\/files\/fruit-image.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" size-full wp-post-40395 wp-image-40396 alignleft\" src=\"https:\/\/www.ou.org\/life\/files\/fruit-image.jpg\" alt=\"fruit image\" width=\"275\" height=\"183\" \/><\/a>What you\u2019ll need:<\/p>\n<ul>\n<li>8 strawberries<\/li>\n<li>1 cup blueberries<\/li>\n<li>lemonade or coconut water<\/li>\n<li>knife or star cookie cutters<\/li>\n<li>popsicle molds<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>Directions:<\/p>\n<ol>\n<li>Cut off stems of strawberries. Rotate and check each one, soak and agitate in soapy water. Wash each one under a steady stream of water. Slice lengthwise or make star shapes with cookie cutters.<\/li>\n<li>Wash blueberries thoroughly under running water.<\/li>\n<li>Place cut strawberries and blueberries into popsicle molds, pour in enough lemonade or coconut water to cover the fruit and insert popsicle stick. Freeze about 1-2 hours and enjoy!<\/li>\n<\/ol>\n<p>(recipe adapted from www.diethood.com &amp; www.lunchboxdad.com; photo courtesy of www.simplemomblog.com)<br \/>\nSweet Potato Fries<\/p>\n<p>What you\u2019ll need:<\/p>\n<ul>\n<li>2 large sweet potatoes, peeled and sliced into fries<\/li>\n<li>1-2 tbsp olive oil<\/li>\n<li>2 tsp curry powder<\/li>\n<li>\u00bd tsp garlic powder<\/li>\n<li>\u00bd tsp salt<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Preheat oven to 400F and grease a baking sheet.<\/li>\n<li>Soak the cut fries in water for around 45 minutes. Drain and pat dry.<\/li>\n<li>Toss the fries with the oil or oil spray in a large bowl. Add all other ingredients and mix well.<\/li>\n<li>Spread the fries on the baking sheet. Bake 25-30 minutes, turning halfway through. (recipe adapted from www.chocolatecoveredkatie.com)<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>Zucchini Fries<\/p>\n<p>What you\u2019ll need:<\/p>\n<ul>\n<li>3 medium zucchinis, sliced into fries<\/li>\n<li>2 large egg whites<\/li>\n<li>1\/2 cup whole wheat bread crumbs<\/li>\n<li>1\/4 tsp dried basil<\/li>\n<li>pinch of dried oregano<\/li>\n<li>1\/4 tsp garlic powder<\/li>\n<li>salt and pepper to taste<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>Directions<\/p>\n<ol>\n<li>Preheat oven to 425\u00b0. Spray a baking sheet with cooking spray, set aside.<\/li>\n<li>In a small bowl beat egg whites with a fork until frothy. Mix together breadcrumbs, basil, oregano, and garlic powder on a plate.<\/li>\n<li>Dip the zucchini in the egg whites and then into the bread crumb mixture making sure all sides get coated well.
