End with Raspberry Cr\u00e8me Br\u00fbl\u00e9e or Warm Almond Cake.<\/p>\n<p>Reserve Cut is especially known for its superior cuts of meat; not only is the meat super prime; each cut is also butchered to perfection and trimmed of excess fat, making every bite perfect.<br \/>\nThe sommelier will help you pair that perfect steak with a selection from the extensive wine list.\u202f-L.<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>2 Tablespoons\u00a0vegetable oil<\/em><\/li>\n<li><em>5 lbs. boneless lean beef short ribs, cut into 3-inch pieces<\/em><\/li>\n<li><em>1 teaspoon kosher salt<\/em><\/li>\n<li><em>\u00bd teaspoon fresh ground black pepper<\/em><\/li>\n<li><em>4 garlic cloves, coarsely chopped<\/em><\/li>\n<li><em>1 (16 oz.) can tomato sauce<\/em><\/li>\n<li><em>1 cup barbeque sauce<\/em><\/li>\n<li><em>1 cup beef stock<\/em><\/li>\n<li><em>\u00bc cup apple cider vinegar<\/em><\/li>\n<li><em>\u00bd teaspoon ground mustard<\/em><\/li>\n<li><em>3 smoked jalape\u00f1os (also known as chipotle chilies)<\/em><\/li>\n<li><em>Salt and pepper, to taste<\/em><\/li>\n<li><em>24 fried wonton wrappers, see note on facing page<br \/>\n<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Preheat oven to 325\u00baF.<\/li>\n<li>Heat oil over medium heat in a large, heavy, oven-safe pot or Dutch oven; brown the ribs on all sides, about 5 minutes, working in batches if necessary. Sprinkle ribs with salt and black pepper as they brown. Transfer cooked ribs to paper towels to absorb extra oil.<\/li>\n<li>Stir garlic into remaining oil in pan; cook until fragrant, about 1 more minute. Mix in tomato sauce, barbeque sauce, beef stock, vinegar, mustard, and jalape\u00f1os. Bring sauce to a boil; lower heat and simmer for 1 minute to blend flavors. Stir in browned ribs.<\/li>\n<li>Cover the pot and bake in the preheated oven until the rib meat is very tender, about 2\u00bd hours. Turn the ribs occasionally while cooking.<\/li>\n<li>Shred beef using two forks. Season with salt and pepper. Place into a clean pan; add some of the cooking sauce. Heat until warm. Fill fried wonton wrappers with shredded beef (see note on frying wontons).<\/li>\n<\/ol>\n<p>A chipotle chili is a jalape\u00f1o pepper that has been smoked and dried (\u201cchipotle\u201d means \u201csmoked\u201d). The chilies require a hechsher. The chipotle imparts a smoky flavor to this dish. There are many different kinds of chilies, though, if you find a different type, you\u2019ll still get the kick without the smoke. Kosher chipotles are easily found online.<\/p>\n<p>To shred the beef more quickly, you might want to try a cooking tool called a \u201cclaw.\u201d<\/p>\n<p>There are a few ways to fry wonton wrappers so they take the shape of a taco. To shape them perfectly, like the restaurant does, you\u2019ll need a taco shell deep fryer basket. A taco shell maker\/taco press, which looks like tongs, will also shape a wonton as it fries, but you have to fry them one at a time. You can make a mini taco shell without any gadgets, though. Heat oil in a saut\u00e9 pan or skillet. Fold the wonton wrapper in half and dip one side into the hot oil. Use a fork to press it down at the bottom. Use tongs to hold the top half in place. Once the bottom becomes stiff and crisp, flip and fry the opposite side.<\/p>\n<p><em>\u201cAllaham\u201d means \u201cbutcher\u201d in Arabic. The family of Albert Allaham, the owner of Reserve Cut (and cousin to Prime Hospitality Group owner Joey Allaham), had been butchers in Syria for over 200 years. Albert Allaham\u2019s family were among the final group of Jews to leave Syria in the 1990s, ending a century of migration to Brooklyn. In 2008, the family opened The Prime Cut in the heart of Syrian-Jewish Flatbush on Avenue U. That\u2019s the ultra-cool gift you send when you want to make someone\u2019s day.<\/p>\n<p>We\u2019ve had requests to feature one of BNG\u2019s healthful recipes, like the low-cal zucchini soup, but this one aptly sums up that \u201cpampering\u201d aspect of the experience and BNG\u2019s sweets.<\/p>\n<p>When Rebecca of BNG shared this recipe with us, she warned, \u201cWait until cool to cut (if you could wait\u2026). Don\u2019t forget to kiss your diet goodbye\u2026.\u201d\u202f-L.<\/p>\n<p>After becoming the only kosher caf\u00e9 using the Nespresso Aguila System, BNG served 35,000 cups of espresso over a nine-month period.<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>8 oz. bittersweet chocolate<\/em><\/li>\n<li><em>1 cup (2 sticks) butter<\/em><\/li>\n<li><em>4 eggs<\/em><\/li>\n<li><em>1-1\/3\u00a0cups (11 oz.) sugar<\/em><\/li>\n<li><em>1 cup (5 oz.) flour<\/em><\/li>\n<li><em>\u00bd cup (2 oz.) cocoa<\/em><\/li>\n<li><em>\u00bd teaspoon kosher salt<\/em><\/li>\n<li><em>1 teaspoon nut extract (optional)<\/em><\/li>\n<li><em>2 teaspoon praline extract (optional)<\/em><\/li>\n<li><em>7 oz. white chocolate, coarsely chopped<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Chocolate Frosting<\/span>:<\/h4>\n<ul>\n<li><em>10 oz. milk chocolate<\/em><\/li>\n<li><em>4 Tablespoons praline paste**<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Garnishes<\/span>:<\/h4>\n<ul>\n<li><em>4 oz. mixed crunchy nuts<\/em><\/li>\n<li><em>Chocolate and white chocolate curls<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Preheat oven to 350\u00baF. Line a rimmed 9&#215;13-inch baking sheet with parchment paper.<\/li>\n<li>Melt chocolate with the butter.<\/li>\n<li>In the bowl of an electric mixer, whip eggs and sugar at high speed for 5-6 minutes.<\/li>\n<li>Carefully pour in melted chocolate mixture. Sift in flour, cocoa, and salt. Mix until mixture is smooth and shiny, about 4 minutes. Add in extracts, if using. Fold in white chocolate.<\/li>\n<li>Pour batter into prepared baking sheet. Bake for 25 minutes (the edges should be hard, top cracked, and middle soft).<\/li>\n<li>Prepare the frosting: Melt chocolate over a double boiler. Add praline paste and mix until combined. Gently pour over the top of the cake. Tilt the pan sideways until entire cake is fully covered. Sprinkle nuts or chocolate curls on top. Refrigerate for 15 minutes, until frosting is set.
