They are full of antioxidants, are a good source of protein, fiber, and iron, and they contain copper, manganese, magnesium, and phosphorus.<\/p>\n<p>Here\u2019s a simple dessert that offers up a creamy texture, sweet taste, and uses natural ingredients.<\/p>\n<h3><span style=\"text-decoration: underline;\"><strong>Banana Cashew Pie<\/strong><\/span><\/h3>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>1\u00bc cups cashews soaked for at least 4 hours or overnight, drained<\/em><\/li>\n<li><em>3\u00bd Tablespoons\u00a0coconut oil<\/em><\/li>\n<li><em>\u00bc cup honey<\/em><\/li>\n<li><em>1 medium ripe banana (\u00bd cup mashed)<\/em><\/li>\n<li><em>1\/3 cup coconut milk<\/em><\/li>\n<li><em>\u00bd teaspoon vanilla extract<\/em><\/li>\n<li><em>\u00bc teaspoon salt<\/em><\/li>\n<li><em>2\u00a0to 3 Tablespoons lemon juice<\/em><\/li>\n<li><em>1 pie crust<\/em><\/li>\n<li><em>1 teaspoon cinnamon (optional)<\/em><\/li>\n<li><em>Fresh banana for slices on top (optional)<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Put all ingredients into a blender and blend until smooth about 1 to 2 minutes. If difficult to blend, add honey or water as needed.<\/li>\n<li>Taste and adjust seasonings as needed. Pour into crust and smooth with a spoon. Cover and freeze until set (about 4\u00a0to 6 hours).<\/li>\n<li>Let thaw for 5 minutes before serving.
