A sweet and juicy fruit symbolic of our hopes that this year we will come before the heavenly court with abundant merits, even more abundant than the seeds in a pomegranate! They are a rich source of antioxidants studied for their positive effects in the body in terms of blood vessels, cholesterol, and slowing prostate cancer growth. They contain vitamins C, K, and are a good source of dietary fiber.<\/p>\n<p>Beets add to this recipe as an excellent source of folate (B vitamin), fiber, and potassium. They have also been researched for their potential role against cancer cells and inflammation.<\/p>\n<p>This tasty, healthy, and colorful salad is a great addition to this year\u2019s holiday menu!<\/p>\n<h3><span style=\"text-decoration: underline;\"><strong>Rosh Hashana Salad<\/strong><\/span><\/h3>\n<h4><strong><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/strong><\/h4>\n<ul>\n<li><em>2 cups fresh beets (about 2 large or 5 small beets)<\/em><\/li>\n<li><em>Pinch of salt<\/em><\/li>\n<li><em>2 cups pomegranate seeds<\/em><\/li>\n<li><em>\u00bc cup lemon juice<\/em><\/li>\n<li><em>1 teaspoon\u00a0honey<br \/>\n<\/em><\/li>\n<\/ul>\n<h4><strong><span style=\"text-decoration: underline;\">Directions<\/span>:<\/strong><\/h4>\n<ol>\n<li>Cook beets in a heavy pot covered with water and the pinch of salt for about 1 hour.<\/li>\n<li>When tender, remove from pot.
