Pick up a package of these buckwheat noodles and give them a spin! They taste great with an Asian-inspired sauce (recipe below) and are filled to the brim with several healthy properties:<\/p>\n<ul>\n<li>Essential amino acids<\/li>\n<li>Antioxidants<\/li>\n<li>Iron, zinc, and selenium<\/li>\n<li>Good source of dietary fiber<\/li>\n<\/ul>\n<p><strong>Soba Supper<\/strong><br \/>\n<em>Ingredients:<br \/>\n3-4 ounces soba noodles (about half of a package)<br \/>\n1 red bell pepper<br \/>\n2 scallions<br \/>\n3 tbsp low-sodium soy sauce<br \/>\n1\/2 tsp mustard<br \/>\n1 tsp honey<br \/>\nDash of black pepper<br \/>\nRed pepper flakes (optional)<\/em><\/p>\n<p>Directions:<br \/>\n1. Cook soba noodles according to package instructions. Drain and rinse under cold water. Set aside in the fridge to cool.<br \/>\n2. While the soba noodles cool, rinse and chop the bell pepper. Slice the scallions lengthwise and inspect between the layers, rinse in soapy water followed by clean water and chop up.<br \/>\n3. In a large bowl, whisk together soy sauce, mustard, honey, black pepper, and red pepper flakes if using. Add the noodles and vegetables to the bowl with the dressing, lightly toss until evenly coated.<br \/>\n4.
