The tantalizing tastes of the cold, tangy fruit blended with the fresh warm salmon is an experience for all the senses.<\/p>\n<p>Pineapple has additional health benefits to boot:<\/p>\n<p><strong>Manganese:<\/strong> Raw, it provides 128% of the daily value in a one cup serving. Manganese is important in energy production and can also aid against inflammation.<\/p>\n<p><strong>Vitamin C:<\/strong> Pineapple can supply 40% of your daily value of Vitamin C.<\/p>\n<p><strong>Bromelain:<\/strong> This enzyme, found mostly in the stem and also in pineapple juice, is a popular and easy way to tenderize meat and is therefore found in several marinades for fish, poultry, and meat dishes. It may also help relieve arthritis pain by easing inflammation.<\/p>\n<p>One easy and refreshing summer dinner coming up:<\/p>\n<h3><span style=\"text-decoration: underline;\"><strong>Salmon with Pineapple Salsa<\/strong><\/span><\/h3>\n<h4><strong><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/strong><\/h4>\n<ul>\n<li><em>2 salmon fillets<\/em><\/li>\n<li><em>1 cup diced pineapple<\/em><\/li>\n<li><em>1 diced tomato<\/em><\/li>\n<li><em>\u00bc cup vegetable broth<\/em><\/li>\n<li><em>1\u00bd Tablespoons\u00a0chopped onion or shallot<\/em><\/li>\n<li><em>1 Tablespoons ground basil or cilantro<\/em><\/li>\n<li><em>2 Tablespoons\u00a0fresh lime or lemon juice<\/em><\/li>\n<li><em>2 Tablespoons\u00a0olive oil<\/em><\/li>\n<li><em>1 Tablespoons\u00a0soy sauce<\/em><\/li>\n<li><em>1 teaspoon sugar or honey<\/em><\/li>\n<li><em>Salt and pepper to taste<\/em><\/li>\n<\/ul>\n<h4><strong><span style=\"text-decoration: underline;\">Directions<\/span>:<\/strong><\/h4>\n<ol>\n<li>Preheat oven to 375\u00b0F.<\/li>\n<li>Whisk together lime\/lemon juice, olive oil, soy sauce, and sugar\/honey. Stir in the onion, pineapple, tomatoes, and basil\/cilantro. Season with salt and pepper. Cover, and refrigerate.<\/li>\n<li>Place salmon in a greased baking pan.
