I needed my mommy to help me get over a tough time with friends and she made&#8230;rice pudding. Since then, rice pudding has been synonymous with fixing any bad day.<\/p>\n<p>It is believed that the concept of rice pudding originated in\u00a0the Middle East and contained other grains, as well saffron, anise and ginger and dried fruits.\u00a0The addition of cinnamon, raisin and poppy seeds to the mix is a more European and British contribution. If you hail from Latin America you\u2019ll find the addition of coconut, coconut milk, ginger, vanilla and cloves.<\/p>\n<p>The key ingredient to rice pudding is obviously rice. You can use any kind of rice but short grain rice seems to work the best.\u00a0The texture of rice is determined by a mixture of amylose and amylopectin.\u00a0 Long-grain rice has more amylose, which is stiff when cool. Short-grain rice has more amylopectin, which stays soft when cool.\u00a0 Since rice pudding should be soft and creamy, short grain is the best.<\/p>\n<p>You can make rice pudding on the cooktop or bake it; both ways produce a fabulous dessert. Just remember, with rice pudding there\u2019s no such thing as leftovers&#8211;it&#8217;s just breakfast made early.<\/p>\n<p><em><strong>Note:<\/strong>\u00a0For those with lactose intolerance or want to make a <\/em>pareve\u00a0<em>pudding<\/em><em>, use rice milk.<\/em><\/p>\n<hr \/>\n<h3><span style=\"text-decoration: underline;\"><strong>Very Creamy Rice Pudding (dairy)<\/strong><\/span><\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-post-30917 wp-image-57202 alignright\" src=\"https:\/\/www.ou.org\/life\/files\/Rice-Pudding-1-e1492676658754-300x200.jpg\" alt=\"Rice Pudding &amp; Cinnamon\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.ou.org\/life\/files\/Rice-Pudding-1-e1492676658754-300x200.jpg 300w, https:\/\/www.ou.org\/life\/files\/Rice-Pudding-1-e1492676658754-768x512.jpg 768w, https:\/\/www.ou.org\/life\/files\/Rice-Pudding-1-e1492676658754-1024x683.jpg 1024w, https:\/\/www.ou.org\/life\/files\/Rice-Pudding-1-e1492676658754.jpg 1183w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>8 to 10 servings<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>\u00bd gallon milk<\/em><\/li>\n<li><em>1 cup sugar<\/em><\/li>\n<li><em>1 cup uncooked rice<\/em><\/li>\n<li><em>3 eggs, beaten<\/em><\/li>\n<li><em>\u00bc cup whipping cream<\/em><\/li>\n<li><em>\u00bc teaspoon salt<\/em><\/li>\n<li><em>1 tablespoon vanilla<\/em><\/li>\n<li><em>Cinnamon to taste<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>In a large saucepan combine the \u00bd gallon milk, sugar and rice. Simmer, covered, 1 hour, stirring frequently. Remove pan from heat and let rest 10 minutes.<\/li>\n<li>In a small bowl, combine eggs, whipping cream, salt and vanilla. Stir into rice mixture and return pot to low heat, stirring constantly, for 2 minutes.<\/li>\n<li>Pour into a 9&#215;13 inch dish and cover with foil. Poke a few holes in the foil to let the steam escape. Let cool for 1 hour.<\/li>\n<li>Remove the foil, sprinkle cinnamon over the top and cover again with the foil. Refrigerate for at least 8 hours.<\/li>\n<\/ol>\n<p><em>My files, source unknown.<\/em><\/p>\n<hr \/>\n<h3><span style=\"text-decoration: underline;\"><strong>Maple Rice Pudding (dairy)<\/strong><\/span><\/h3>\n<p>8 servings<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>1 cup and 3 Tablespoons uncooked rice<\/em><\/li>\n<li><em>2-1\/3 cups plus\u00a01 Tablespoon water<\/em><\/li>\n<li><em>3\u00bc cups whole milk<\/em><\/li>\n<li><em>1\u00bd teaspoons maple extract<\/em><\/li>\n<li><em>\u00bd cup sugar<\/em><\/li>\n<li><em>\u00bc cup maple syrup (use the real stuff)<\/em><\/li>\n<li><em>2 Tablespoons brown sugar<\/em><\/li>\n<li><em>\u00bd teaspoon nutmeg<\/em><\/li>\n<li><em>\u00be to 1 teaspoon cinnamon<\/em><\/li>\n<li><em>Dash of ground cloves<\/em><\/li>\n<li><em>1 Tablespoon butter or margarine (optional)<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>In a saucepan combine the rice and water. Bring the mixture to a boil then reduce the heat and let the mixture simmer, uncovered for 20 minutes.<\/li>\n<li>Add 1\u00be cups of the milk, sugar, maple syrup and maple extract. Bring to a boil, and let simmer over medium heat until thick and creamy, about 15 minutes.<\/li>\n<li>Stir in the remaining milk, nutmeg, cinnamon, cloves and butter. Mix to combine. Cook stirring over low heat for another 5 minutes.<\/li>\n<li>Pour the mixture into a casserole dish, or serving bowls, and let stand for 10 minutes before serving.<\/li>\n<\/ol>\n<p><em>This can be refrigerated and served cold.<\/em><\/p>\n<p><em>My files, source unknown.<\/em><\/p>\n<hr \/>\n<h3><span style=\"text-decoration: underline;\"><strong>Arroz con Leche (Mexican\u00a0Rice Pudding) (dairy)<\/strong><\/span><\/h3>\n<p>6 servings<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>3 cups whole milk<\/em><\/li>\n<li><em>1\u00bc cup water<\/em><\/li>\n<li><em>1 cup rice, short or medium grain<\/em><\/li>\n<li><em>2 cinnamon sticks<\/em><\/li>\n<li><em>\u00bc teaspoon salt<\/em><\/li>\n<li><em>1 (14 oz.) can sweetened condensed milk<\/em><\/li>\n<li><em>\u00bd cup raisins, soaked in warm water to soften<\/em><\/li>\n<li><em>2 teaspoons vanilla<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>In a saucepan combine the milk and water and bring to a simmer.<\/li>\n<li>Stir in the rice and cinnamon and cook, uncovered, about 20 to 30 minutes. Stir occasionally.<\/li>\n<li>When the rice is soft, remove cinnamon sticks and stir in condensed milk, vanilla, salt and raisins. Return to a slight simmer and cook for an additional 10 to 15 minutes or until most of the liquid is absorbed and rice has a pudding-like consistency.<\/li>\n<li>Serve hot, topped with a sprinkle of cinnamon.<\/li>\n<\/ol>\n<p><em>From\u00a0<a href=\"http:\/\/about.com\/\" target=\"_blank\">about.com<\/a>\u00a0a recipe for<\/em> Arroz con Leche <em>by Chelsie Kenyon.<\/em><\/p>\n<hr \/>\n<h3><span style=\"text-decoration: underline;\"><strong>Chocolate Rice Pudding (dairy)<\/strong><\/span><\/h3>\n<p>8 servings<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>2\u00bd cups rice<\/em><\/li>\n<li><em>1 teaspoon salt<\/em><\/li>\n<li><em>3\u00be cups whole milk<\/em><\/li>\n<li><em>1 Tablespoons cocoa powder<\/em><\/li>\n<li><em>1\u00bd cups sugar<\/em><\/li>\n<li><em>6 egg yolks<\/em><\/li>\n<li><em>4 Tablespoons grated semi sweet or bittersweet chocolate<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Bring 2 quarts water to a boil in a large saucepan. Add the rice and salt and cover. Simmer over low heat for 10 minutes. Drain.<\/li>\n<li>Pour the milk over the rice and whisk in the cocoa powder.<\/li>\n<li>Bring the mixture to a boil. Stir to make sure the cocoa is combined and then reduce to a simmer. Cook, uncovered, for 30 minutes, or until the rice is soft.<\/li>\n<li>In a bowl combine the sugar and egg yolks. Whisk in \u00bd cup of the rice mixture to the sugar mixture then mix it into the rice in the pan. Whisk just to combine the sugar mixture to the rice.<\/li>\n<li>Cook, stirring constantly until the pudding is hot but not boiling.<\/li>\n<li>Place the rice in a serving bowl or divide it among individual serving cups.<\/li>\n<li>Cover with plastic wrap and refrigerate at least 2 hours.<\/li>\n<li>Grate chocolate over each pudding.<\/li>\n<\/ol>\n<hr \/>\n<h3><span style=\"text-decoration: underline;\"><strong>Brown Rice Pudding (dairy)<\/strong><\/span><\/h3>\n<p>4 servings<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>1\u00bc cups water<\/em><\/li>\n<li><em>\u00bd cup uncooked brown rice<\/em><\/li>\n<li><em>1\u00bd teaspoons grated lemon zest, divided<\/em><\/li>\n<li><em>\u00bc teaspoon salt<\/em><\/li>\n<li><em>3 cups whole milk<\/em><\/li>\n<li><em>3 Tablespoons brown sugar<\/em><\/li>\n<li><em>1 Tablespoon vanilla extract<\/em><\/li>\n<li><em>Sliced mango<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>In a large saucepan, combine the water, rice, 1\u00bd teaspoons lemon\u00a0peel and salt. Bring the mixture to a boil.<\/li>\n<li>Reduce heat; cover and simmer for\u00a030 to 40 minutes or until the rice is tender.<\/li>\n<li>Add the milk and brown sugar and mix to combine. Cook, uncovered, for 40\u00a0to 50 minutes or most of the milk has been absorbed.
