We are soooooo not talking about store bought stuff here.<\/p>\n<p>For some families the \u201cmust have it\u201d cookie is the giant chocolate chip, others are all about snicker doodles. Still others, dare I say it, <em>health conscious<\/em> individuals feel that the oatmeal raisin is the only way to go.<\/p>\n<p>But no matter what your family favorite is, it\u2019s always nice to have a few extra treats to serve to the family and friends that are bound to come over.<\/p>\n<p>The following recipes are all kid-friendly and have one extra special ingredient: POPCORN. Not your typical \u201cmake a cookie\u201d ingredient but one that\u2019s guaranteed to have your kids and their friends stuffing a few extra helpings into their back pockets for the trip home.<\/p>\n<h3><span style=\"text-decoration: underline;\"><strong><em><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-post-30666 wp-image-55947 alignright\" src=\"https:\/\/www.ou.org\/life\/files\/Chocolate-Drizzle-Popcorn-300x200.jpg\" alt=\"Chocolate Drizzle Popcorn\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.ou.org\/life\/files\/Chocolate-Drizzle-Popcorn-300x200.jpg 300w, https:\/\/www.ou.org\/life\/files\/Chocolate-Drizzle-Popcorn-768x512.jpg 768w, https:\/\/www.ou.org\/life\/files\/Chocolate-Drizzle-Popcorn-1024x683.jpg 1024w, https:\/\/www.ou.org\/life\/files\/Chocolate-Drizzle-Popcorn.jpg 1254w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/em>Popcorn Cookies (dairy or pareve)<\/strong><\/span><\/h3>\n<p>2 to 2\u00bd dozen cookies depending on the size<\/p>\n<h4><strong><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/strong><\/h4>\n<ul>\n<li><em>1\u00bd cups flour<\/em><\/li>\n<li><em>1 teaspoon baking soda<\/em><\/li>\n<li><em>\u00bc teaspoon salt<\/em><\/li>\n<li><em>\u00bd cup butter or margarine, softened<\/em><\/li>\n<li><em>1 cup sugar<\/em><\/li>\n<li><em>1 egg<\/em><\/li>\n<li><em>1 teaspoon vanilla<\/em><\/li>\n<li><em>2 cups popped popcorn, slightly crushed<\/em><\/li>\n<li><em>1 cup (6 oz.) semisweet chocolate chips<\/em><\/li>\n<li><em>\u00bd cup chopped pecans<\/em><\/li>\n<\/ul>\n<h4><b><span style=\"text-decoration: underline;\">Directions<\/span>:<\/b><\/h4>\n<ol>\n<li>Preheat oven to 350\u00b0F. Grease 2 cookie sheets and set aside (you can use parchment paper instead if you prefer).<\/li>\n<li>In a bowl combine the flour, baking soda and salt. Mix and set aside.<\/li>\n<li>In the bowl of an electric mixer combine the butter and sugar and beat until light and fluffy. Add in the egg and vanilla and mix to combine. Stir in the flour mixture just until mixed.<\/li>\n<li>By hand, fold in the popcorn, chocolate chips and pecans.<\/li>\n<li>Drop by heaping tablespoonfuls (about 2 inches apart) onto the prepared baking sheets. Bake for 12 to 14 minutes or until golden brown.<\/li>\n<li>Let cool on cookie sheet for about 2 minutes, then transfer the cookies to cooling racks and cool to room temperature.<\/li>\n<\/ol>\n<p>Store in an airtight container.<\/p>\n<p><em>Modified from about.com.<\/em><\/p>\n<hr \/>\n<h3><span style=\"text-decoration: underline;\"><strong>Popped Cashew\u00a0Brittle\u00a0(dairy)<\/strong><\/span><\/h3>\n<h4><strong><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/strong><\/h4>\n<ul>\n<li><em>6 cups popped butter or regular flavored popcorn<\/em><\/li>\n<li><em>1 cup M&amp;M&#8217;S<\/em><\/li>\n<li><em>1\u00bd cups packed brown sugar<\/em><\/li>\n<li><em>1 stick unsalted butter (you can use salted, but unsalted tastes better in this recipe)<\/em><\/li>\n<li><em>\u00bd cup light corn syrup<\/em><\/li>\n<li><em>1 teaspoon vanilla<\/em><\/li>\n<li><em>1 cup salted cashews<\/em><\/li>\n<li><em>\u00bd teaspoon baking soda<\/em><\/li>\n<\/ul>\n<h4><b><span style=\"text-decoration: underline;\">Directions<\/span>:<\/b><\/h4>\n<ol>\n<li>Spread the popcorn evenly in a 15&#215;10-inch cookie sheet with sides. Add the M&amp;M\u2019s and mix to combine. Set aside.<\/li>\n<li>In a sauce pan combine the sugar, butter, corn syrup, and vanilla. Bring the mixture to a boil then reduce the heat to medium and cook for 3 minutes, stirring constantly (use a wooden spoon). Add the cashews. Mix to combine and cook for about 2 more minutes, stirring constantly. Do not let the mixture burn.<\/li>\n<li>Remove the caramel mixture from the heat and stir in the baking soda, mix to combine. As soon as the baking soda is totally mixed in pour the caramel mixture over the popped corn and M&amp;M\u2019s and mix gently until coated. (Be careful: This stuff is hot and if you get it on your hands it will burn!)<\/li>\n<li>Let the mixture cool for 30 minutes or so until it\u2019s hardened. Break it into pieces and serve.<\/li>\n<\/ol>\n<p><em>My files, source unknown.<\/em><\/p>\n<hr \/>\n<h3><span style=\"text-decoration: underline;\"><strong>Popcorn Turtles (dairy)<\/strong><\/span><\/h3>\n<p>Yields 2 dozen<\/p>\n<h4><strong><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/strong><\/h4>\n<ul>\n<li><em>11 cups popped buttered microwave popcorn<\/em><\/li>\n<li><em>Vegetable cooking spray<\/em><\/li>\n<li><em>Pecan halves (72 pecan halves)<\/em><\/li>\n<li><em>1 (14 oz.) bag\u00a0caramels, unwrapped<\/em><\/li>\n<li><em>2 Tablespoons margarine<\/em><\/li>\n<li><em>2 Tablespoons milk<\/em><\/li>\n<li><em>1 (12 oz.) bag semisweet chocolate chips<\/em><\/li>\n<\/ul>\n<h4><strong><span style=\"text-decoration: underline;\">Directions<\/span>:<\/strong><\/h4>\n<ol>\n<li>Spray 2 large baking sheets with cooking spray. Arrange 24 groups of three pecan halves in flower patterns on baking sheet.<\/li>\n<li>In a microwavable bowl combine the caramels, margarine and milk and microwave for 3 to 4 minutes or until caramels are melted, stirring once or twice. Pour the caramel mixture over the popcorn and toss to coat. Cool 2 to 3 minutes.<\/li>\n<li>Spray your hands with the cooking spray because this stuff is sticky. Grab a handful of the coated popcorn and shape it into a 1-inch ball and then flatten it slightly. Press the round onto center of each pecan grouping.<\/li>\n<li>When you\u2019ve made all 24 of the popcorn turtles put the chocolate into another microwave bowl and microwave for about 1\u00bd to 2 minutes, until the chocolate is melted. Still it, then drizzle it over the top of the popcorn balls.<\/li>\n<li>Let cool for at least 1 hour or overnight.<\/li>\n<\/ol>\n<p><em>Submitted by Randi Madison of Cleveland, OH.\u00a0Modified from the Orville Redenbacher web page.<\/em><\/p>\n<hr \/>\n<h3><span style=\"text-decoration: underline;\"><strong>Cookies\u00a0and Cream\u00a0Popcorn (dairy or pareve)<\/strong><\/span><\/h3>\n<p>10 to\u00a012 servings<\/p>\n<h4><strong><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/strong><\/h4>\n<ul>\n<li><em>8 to 10 cups popcorn<\/em><\/li>\n<li><em>16 chocolate sandwich cookies, chopped up pretty fine but not crushed (I use Oreo\u2019s)<\/em><\/li>\n<li><em>9 oz.\u00a0white or dark chocolate<\/em><\/li>\n<li><em>\u00bc cup rainbow sprinkles<\/em><\/li>\n<\/ul>\n<h4><strong><span style=\"text-decoration: underline;\">Directions<\/span>:<\/strong><\/h4>\n<ol>\n<li>In a large bowl combine the popcorn with the chopped cookies and set it aside.<\/li>\n<li>In a microwave bowl melt the white chocolate until smooth. Pour it over the popcorn and cookies and toss gently.<\/li>\n<li>Spread the mixture on a cookie sheet and sprinkle the top with the sprinkles. Mix gently so the sprinkles get everywhere.<\/li>\n<li>Let cool for at least an hour while the chocolate sets.<\/li>\n<\/ol>\n<p><em>My files, source unknown.<\/em><\/p>\n<hr \/>\n<h3><span style=\"text-decoration: underline;\"><strong>Chunky Caramel Popcorn\u00a0(dairy)<\/strong><\/span><\/h3>\n<p><em>(you can omit the white chocolate)<\/em><\/p>\n<h4><strong><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/strong><\/h4>\n<ul>\n<li><em>10 to 12 cups popped popcorn<\/em><\/li>\n<li><em>1 (9.75\u00a0oz.) can (2 cups) whole cashews<\/em><\/li>\n<li><em>1 (5\u00a0oz.) bag (1\u00bd cups) pecan halves<\/em><\/li>\n<li><em>1 cup firmly packed brown sugar<\/em><\/li>\n<li><em>\u00be cup butter or margarine<\/em><\/li>\n<li><em>\u00bd cup light corn syrup<\/em><\/li>\n<li><em>1 teaspoon baking soda<\/em><\/li>\n<\/ul>\n<h4><strong><span style=\"text-decoration: underline;\">Drizzle<\/span>:<\/strong><\/h4>\n<ul>\n<li><em>2 cups kosher mini marshmallows<\/em><\/li>\n<li><em>1 cup dark chocolate chips<\/em><\/li>\n<li><em>1\u00bd teaspoons shortening<\/em><\/li>\n<li><em>\u00bd cup white baking chips<\/em><\/li>\n<\/ul>\n<h4><strong><span style=\"text-decoration: underline;\">Directions<\/span>:<\/strong><\/h4>\n<ol>\n<li>Preheat oven to 250\u00b0F.<\/li>\n<li>In a large roasting pan combine the popcorn, cashews and pecans and set it aside. In a sauce pan combine the brown sugar, butter and corn syrup. Cook over medium heat until mixture comes to a boil (7 to 8 minutes). Continue boiling 2 minutes. Remove from heat; stir in baking soda.<\/li>\n<li>Pour the hot mixture over popcorn mixture and stir to coat. Bake for 40 to 50 minutes, stirring every 10 to 15 minutes.<\/li>\n<li>Remove the pan from the oven and spread the mixture onto waxed paper or parchment paper on sided cookie sheets. Cool completely. This mixture will be in large pieces, don\u2019t break it up.<\/li>\n<li>In a microwave bowl combine the chocolate chips and 1 teaspoon margarine or butter. Microwave for 30 seconds, stir and microwave for another 30 seconds or until smooth.<\/li>\n<li>Sprinkle the mini marshmallows over the top of the mixture then drizzle the melted chocolate over popcorn mixture.
