If it\u2019s made from semolina (milled durum wheat, a \u201chard\u201d variety), it will remain resilient in cooking, and can even be simmered in a stew or baked without losing its chewy character. Let it become your new all-purpose best friend in the kitchen.<\/p>\n<p>The name is Italian and it means barley, because orzo used to be made from it rather than the wheat varieties used today. It\u2019s terrific in soups and you can use it as a side or cooked into all kinds of dishes. Orzo is my new favorite and I use it in tons of dishes.<\/p>\n<p><a href=\"http:\/\/www.joyofkosher.com\/recipe\/italian-wedding-soup\/\"><span style=\"text-decoration: underline;\"><strong><em>Italian Wedding Soup<\/em> <\/strong><\/span><\/a>will be your new Friday night swap for classic chicken soup.\u00a0 Learn to make it with my video.<\/p>\n<p><iframe loading=\"lazy\" frameborder=\"0\" height=\"387\" src=\"https:\/\/www.youtube.com\/embed\/wtB_5Vg6-ek\" width=\"620\"><\/iframe><\/p>\n<p>You can cook orzo as you would pasta (with lots of water and then drain it) or as you would rice (with just enough water to be absorbed.) Use four cups of water to 1\u00bd cups of orzo and let it cook for about 10 minutes.<\/p>\n<p>It\u2019s another one of those fab presto-chango foods that gets you out of the kitchen fast!<\/p>\n<p>You can also try two of my other favorite recipes for orzo.<\/p>\n<h3><strong><span style=\"text-decoration: underline;\">Orzo with Chicken, Dill and Chickpeas<\/span><\/strong><\/h3>\n<p>Yields 4 cups<\/p>\n<p><em>This easy pasta salad makes great use of leftover chicken or a store bought rotisserie bird. The salad also keeps well refrigerated for a few days and is perfect to take to work or school for lunch.<\/em><\/p>\n<h4><strong><span style=\"text-decoration: underline;\">Times<\/span>:<\/strong><\/h4>\n<ul>\n<li>Prep Time : 5 min<\/li>\n<li>Cook Time : 10 min<\/li>\n<li>Ready Time : 15 min<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-post-29600 wp-image-29602\" title=\"orzo-w_chicken\" src=\"http:\/\/www.ou.org\/life\/files\/orzo-w_chicken-300x240.jpg\" alt=\"\" width=\"300\" height=\"240\" srcset=\"https:\/\/www.ou.org\/life\/files\/orzo-w_chicken-300x240.jpg 300w, https:\/\/www.ou.org\/life\/files\/orzo-w_chicken.jpg 425w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>1 lb.\u00a0orzo<\/em><\/li>\n<li><em>2 cups shredded cooked chicken<\/em><\/li>\n<li><em>1 (15-oz.) can chickpeas, drained and rinsed<\/em><\/li>\n<li><em>1 cup sliced black olives<\/em><\/li>\n<li><em>\u00bd cup chopped green onion<\/em><\/li>\n<li><em>\u00bc cup chopped fresh dill<\/em><\/li>\n<li><em>2 lemons, juiced<\/em><\/li>\n<li><em>2 Tablespoons olive oil<\/em><\/li>\n<li><em>1 clove garlic, minced<\/em><\/li>\n<li><em>Kosher salt<\/em><\/li>\n<li><em>Freshly ground black pepper<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Bring a large pot of water to a boil and cook orzo according to package instructions. Drain well and set aside.<\/li>\n<li>In a large bowl, combine orzo, chicken, chickpeas, olives, green onion and dill.<\/li>\n<li>In a small bowl whisk together lemon juice, olive oil and garlic.<\/li>\n<li>Pour dressing over orzo salad and toss well to combine. Season with salt and pepper to taste.<\/li>\n<\/ol>\n<hr \/>\n<h3><strong><span style=\"text-decoration: underline;\">Italian Vegetable Soup with Cheese Bread<\/span><\/strong><\/h3>\n<p>4 servings<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Times<\/span>:<\/strong><\/p>\n<ul>\n<li>Prep Time: 8 min<\/li>\n<li>Cook Time: 27 min<\/li>\n<li>Ready Time: 35 min<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-post-29600 wp-image-29603\" title=\"veggie-soup\" src=\"http:\/\/www.ou.org\/life\/files\/veggie-soup-300x202.jpg\" alt=\"\" width=\"300\" height=\"202\" srcset=\"https:\/\/www.ou.org\/life\/files\/veggie-soup-300x202.jpg 300w, https:\/\/www.ou.org\/life\/files\/veggie-soup-550x370.jpg 550w, https:\/\/www.ou.org\/life\/files\/veggie-soup.jpg 647w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<h4><strong><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/strong><\/h4>\n<ul>\n<li><em>1 Tablespoon olive oil<\/em><\/li>\n<li><em>1 large onion, peeled and coarsely chopped<\/em><\/li>\n<li><em>2 small zucchini, cut into \u00bd-inch cubes<\/em><\/li>\n<li><em>2 cloves garlic, minced<\/em><\/li>\n<li><em>5 to 6 cups vegetable broth<\/em><\/li>\n<li><em>1 cup frozen cut green beans<\/em><\/li>\n<li><em>1 cup orzo<\/em><\/li>\n<li><em>1 (14.5 oz.) can diced tomatoes<\/em><\/li>\n<li><em>1 tablespoon dried oregano<\/em><\/li>\n<li><em>8 slices baguette or Italian loaf<\/em><\/li>\n<li><em>\u00bd cup shredded mozzarella cheese<\/em><\/li>\n<li><em>\u00bc cup store bought pesto<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Heat olive oil in a medium pot or dutch oven over medium high heat. Add onions and saut\u00e9 5 minutes. Add zucchini and garlic and saut\u00e9 4 more minutes.<\/li>\n<li>Add broth, beans, orzo, tomatoes and oregano and bring to a boil. Reduce to a simmer and cook 14 to 18 minutes or until orzo is cooked and vegetables are tender.<\/li>\n<li>Preheat oven to a low broil.\u00a0 Place sliced bread on a large sheet pan. Sprinkle 1 tablespoon cheese on each slice of bread and broil on low until cheese is bubbly and bread is lightly browned.<\/li>\n<li>To serve, ladle soup into 4 bowls and top each with 1 tablespoon pesto.
