Every year I try to draw inspiration from the season and the holiday customs. And just when I come up with a fresh new idea, I realize I already did that, five years ago.<\/p>\n<p>My personal custom on Rosh Hashanah is to make a\u00a0<em>simanim<\/em>-inspired menu. The goal is to get the whole mind-body-soul-food connection thing to click in my stomach and then in my brain.\u00a0 Sure, there are loads of\u00a0<em>simanim\u00a0<\/em>(symbolic foods) to work with \u2013 but the challenge is to use them in unexpected ways.\u00a0 (And don\u2019t tell me to do apple pie and a honey cake. I\u2019ve gotta do those anyway, or hubby will pout.) I know y\u2019all want a little something special.<\/p>\n<p>Here goes my creative use of all those farm fresh apples this Rosh Hashanah:\u00a0Apple and Parsnip Soup.\u00a0Don\u2019t know why I didn\u2019t think of this before. This one has no added sugar, with just a hint of sweetness from the apples.<\/p>\n<h3><strong><span style=\"text-decoration: underline;\">Apple and Parsnip Soup<\/span><\/strong><\/h3>\n<ul>\n<li><a href=\"http:\/\/www.ou.org\/life\/files\/Picture-931.png\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-post-29306 wp-image-29350\" title=\"Picture 93\" src=\"http:\/\/www.ou.org\/life\/files\/Picture-931-300x201.png\" alt=\"\" width=\"300\" height=\"201\" srcset=\"https:\/\/www.ou.org\/life\/files\/Picture-931-300x201.png 300w, https:\/\/www.ou.org\/life\/files\/Picture-931.png 455w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>Prep Time : 15 min<\/li>\n<li>Cook Time : 30 min<\/li>\n<li>Ready Time : 45 min<\/li>\n<\/ul>\n<p>Makes\u00a06 servings<\/p>\n<h4><strong><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/strong><\/h4>\n<ul>\n<li><em>2 Tablespoons olive oil<\/em><\/li>\n<li><em>2 large shallots, peeled and sliced<\/em><\/li>\n<li><em>1 lb. parsnips, peeled\u00a0and cut into \u00bd-inch pieces<\/em><\/li>\n<li><em>4 granny smith apples, peeled, cored and cut into 1-inch pieces, plus more for garnish if desired<\/em><\/li>\n<li><em>\u00bd teaspoon curry powder<\/em><\/li>\n<li><em>1\u00bd teaspoon ground coriander<\/em><\/li>\n<li><em>\u00bd teaspoon garlic powder<\/em><\/li>\n<li><em>5 cups chicken flavored broth<\/em><\/li>\n<li><em>Kosher salt<\/em><\/li>\n<li><em>Freshly ground black pepper<\/em><\/li>\n<\/ul>\n<h4><strong><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/strong><\/h4>\n<ol>\n<li>Heat oil in a large pot over medium-high heat. Add shallots and saut\u00e9 2 minutes. Add parsnips and saut\u00e9 3 minutes more. Add apples and stir 1 minute. Add curry powder, coriander and garlic powder, stir to coat.<\/li>\n<li>Add chicken stock and bring to a boil.<\/li>\n<li>Reduce heat and simmer until vegetables are tender, about 20 minutes. Not only does it look pretty, but it will also help the apples and vegetables cook evenly.<\/em><\/p>\n<ul>\n<li>Prep Time : 10 minutes<\/li>\n<li>Ready Time : 10 minutes<\/li>\n<\/ul>\n<p>4 servings<\/p>\n<h4><strong><span style=\"text-decoration: underline;\"> Ingredients<\/span>:<\/strong><\/h4>\n<ul>\n<li><em>1 teaspoon ground cinnamon<\/em><\/li>\n<li><em>1 teaspoon mustard powder<\/em><\/li>\n<li><em>1 teaspoon fresh thyme leaves<\/em><\/li>\n<li><em>1 Tablespoon kosher salt<\/em><\/li>\n<li><em>1 teaspoon freshly ground black pepper<\/em><\/li>\n<li><em>1 (4-lb.) chicken, cut into eighths<\/em><\/li>\n<li><em>1 Tablespoon olive oil<\/em><\/li>\n<li><em>1 medium onion, in \u00bc-inch slices<\/em><\/li>\n<li><em>1 cup fennel, in \u00bc-inch slices<\/em><\/li>\n<li><em>2 tart apples, unpeeled, cored and cut into \u00bc-inch slices<\/em><\/li>\n<li><em>1 cup Manischewitz Reduced Sodium All Natural Chicken Broth<\/em><\/li>\n<\/ul>\n<h4><strong><span style=\"text-decoration: underline;\"> Directions<\/span>:<\/strong><\/h4>\n<ol>\n<li>Preheat oven to 350\u00b0F.<\/li>\n<li>In a small bowl, combine the cinnamon, mustard, thyme, salt, and pepper. Rub over the chicken.<\/li>\n<li>Heat oil, over high heat, in an ovenproof saute pan that is large enough to fit all the chicken in one layer without crowding the pan. <em>If the pan is too small, work in batches.<\/em> Brown chicken pieces about 4 to 5 minutes on each side.<\/li>\n<li>Transfer the chicken to a plate and set aside.<\/li>\n<li>Add onions, fennel, and apples to the saute pan and cook for 5 minutes, stirring to make sure they don\u2019t burn.<\/li>\n<li>Return chicken and any accumulated juices to the saute pan with onions, fennel, and apples; cook for 5 minutes.<\/li>\n<li>Add broth and place pan in the oven. Continue cooking for 30 minutes.<\/li>\n<li>Arrange chicken on a large platter. Surround chicken with onions, fennel, and apples. Pour pan juices over top.<\/li>\n<\/ol>\n<hr \/>\n<p dir=\"ltr\">And finally, for dessert try a figure-forgiving treat, my\u00a0Sweet Baked Apple Strudel Egg Roll.<\/p>\n<h3 dir=\"ltr\"><span style=\"text-decoration: underline;\"><strong>Sweet Baked Apple Strudel Egg Roll<\/strong><\/span><\/h3>\n<ul>\n<li><a href=\"http:\/\/www.ou.org\/life\/files\/Picture-92.png\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-post-29306 wp-image-29348\" title=\"Picture 92\" src=\"http:\/\/www.ou.org\/life\/files\/Picture-92-300x201.png\" alt=\"\" width=\"300\" height=\"201\" srcset=\"https:\/\/www.ou.org\/life\/files\/Picture-92-300x201.png 300w, https:\/\/www.ou.org\/life\/files\/Picture-92.png 457w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>Prep Time : 15 min<\/li>\n<li>Cook Time : 30 min<\/li>\n<li>Ready Time : 45 min<\/li>\n<\/ul>\n<p>8 servings<\/p>\n<h4><strong><span style=\"text-decoration: underline;\"> Ingredients<\/span>:<\/strong><\/h4>\n<ul>\n<li><em>2 Tablespoons olive oil<\/em><\/li>\n<li><em>3 medium Granny Smith apples, peeled, cored and cut into \u00bc-inch chunks<\/em><\/li>\n<li><em>\u00bc currants or raisins<\/em><\/li>\n<li><em>\u00bc cup chopped hazelnuts<\/em><\/li>\n<li><em>\u00bc cup granulated sugar<\/em><\/li>\n<li><em>3 Tablespoons honey<\/em><\/li>\n<li><em>Juice of 1 lemon<\/em><\/li>\n<li><em>\u00bd teaspoon ground cinnamon<\/em><\/li>\n<li><em>8 Gefen Egg Roll Wrappers<\/em><\/li>\n<li><em>1 egg, beaten with 1 teaspoon water<\/em><\/li>\n<li><em>\u00bc cup confectioner\u2019s sugar<\/em><\/li>\n<\/ul>\n<h4><strong><span style=\"text-decoration: underline;\"> Directions<\/span>:<\/strong><\/h4>\n<ol>\n<li>Heat oil in a large saut\u00e9 pan over medium high heat. Add apples and cook for 8 to 10 minutes or until slightly softened.<\/li>\n<li>Add currants, hazelnuts, sugar, honey, lemon juice and cinnamon and cook for 2 minutes more. Let cool.<\/li>\n<li>Preheat oven to 400\u00b0F.<\/li>\n<li>Lay one egg roll wrap in front of you with a tip pointing down. Spoon about 3 Tablespoons of filling into the middle of the wrap. Lightly brush each corner with egg wash. Fold bottom corner up and over the filling, tuck each side in and continue to roll up, sealing tightly.
