We\u2019d add the filling and pinch together the sides and bask in our accomplishment.<\/p>\n<p>It was painfully difficult to wait between making the three-cornered delight until they were fully baked and ready to be eaten.\u00a0 We would smell the cinnamon and sugar topping (the secret ingredient that makes them smell almost as good as they taste) and our impatience would get the best of us.\u00a0 We&#8217;d bite into the cookies before they cooled off\u2026resulting in burnt taste buds from the hot sugary jelly inside.<\/p>\n<p>From an objective standpoint years later, I think I can say it was definitely worth it.<\/p>\n<p>I am now in the baking module of my culinary program and have definitely been inspired to experiment!\u00a0 I am always experimental in my recipes, but this one required revamping a classic. You&#8217;ll see what I mean.<\/p>\n<p>I hope you enjoy my take on the classic <em>hamantashen<\/em> and enjoy these as much as I and many other taste-testers did!<\/p>\n<h3><strong><span style=\"text-decoration: underline;\">Lime and Mint Hamantaschen<\/span><\/strong><\/h3>\n<p><strong><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-24319\" title=\"Lime and Mint\" src=\"http:\/\/www.ou.org\/life\/files\/Lime-and-Mint.jpg\" alt=\"\" width=\"425\" height=\"282\" srcset=\"https:\/\/www.ou.org\/life\/files\/Lime-and-Mint.jpg 425w, https:\/\/www.ou.org\/life\/files\/Lime-and-Mint-300x199.jpg 300w\" sizes=\"auto, (max-width: 425px) 100vw, 425px\" \/><\/strong>Yields 2\u00bd dozen<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<h4><span style=\"text-decoration: underline;\">Dough<\/span>:<\/h4>\n<ul>\n<li><em>2 cups flour<\/em><\/li>\n<li><em>\u00be teaspoon baking powder<\/em><\/li>\n<li><em>1\/8 teaspoon salt<\/em><\/li>\n<li><em>\u00bd cup Earth Balance or butter, softened<\/em><\/li>\n<li><em>2\/3 cup Sugar<\/em><\/li>\n<li><em>1 Egg<\/em><\/li>\n<li><em>1 egg yolk (reserve the egg white for assembling the cookie)<\/em><\/li>\n<li><em>1 teaspoons vanilla<\/em><\/li>\n<li><em>1 to\u00a01\u00bd teaspoons\u00a0peppermint oil<\/em><\/li>\n<li><em>1 Tablespoon\u00a0fresh mint leaves, minced<\/em><\/li>\n<li><em>Raw sugar (optional)<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Lime Curd Filling<\/span>:<\/h4>\n<ul>\n<li><em>1 cup\u00a0sugar<\/em><\/li>\n<li><em>\u00bc cup Earth Balance or butter<\/em><\/li>\n<li><em>1\/8 cup cornstarch<\/em><\/li>\n<li><em>\u00be cup fresh lime juice<\/em><\/li>\n<li><em>1 Tablespoon\u00a0lime zest<\/em><\/li>\n<li><em>2 eggs, beaten<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Directions<\/span>:<\/h4>\n<ol>\n<li dir=\"ltr\"><strong><span style=\"text-decoration: underline;\">Dough<\/span>:<\/strong> Stir together flour, baking powder and salt.\u00a0 In another bowl, beat butter until creamy.\u00a0 Beat in sugar until fluffy.\u00a0 Beat in egg, egg yolk, vanilla, peppermint oil and mint leaves.\u00a0 Beat in flour mixture until combined.\u00a0 Divide dough in half and wrap each half in plastic wrap and refrigerate for several hours or overnight.<\/li>\n<li dir=\"ltr\">Preheat oven to 375\u00b0F and line 2 large cookie sheets with parchment paper.<\/li>\n<li dir=\"ltr\">Roll out refrigerated dough on a lightly floured surface, about 1\/8 inch thick.\u00a0 Cut rounds, until dough is finished.\u00a0 Fill the rounds with the lime curd filling.<\/li>\n<li dir=\"ltr\">With your pinky, dip in egg white and lightly wet the edges around the <em>hamantaschen<\/em>. Make the <em>hamantaschen<\/em> triangle shape by folding the bottom to make two corners and pinching the top to make the 3rd (requires both hands).\u00a0 Brush the outer part of the <em>hamantaschen<\/em> with egg white and sprinkle on the raw sugar.<\/li>\n<li dir=\"ltr\">Bake for about 12 minutes until lightly browned.<\/li>\n<li><strong><span style=\"text-decoration: underline;\">Filling<\/span>:<\/strong>\u00a0 Place the sugar, earth balance, cornstarch, lime juice and lime zest in a sauce pan.\u00a0 Heat the mixture till the butter melts.<\/li>\n<li>Pour some of the lime mixture into the eggs and stir together to temper the eggs.<\/li>\n<li>Pour the egg mixture into the pan and whisk constantly till mixture starts to boil and thicken.\u00a0 Whisk for about a minute, take off heat and strain into a bowl (this will separate any egg that may have curdled from the curd itself).<\/li>\n<li>Refrigerate the curd till ready to use.<\/li>\n<\/ol>\n<p><em>Tip:\u00a0When baked, the filling soaks into the cookie and the curd deflates.\u00a0 They look beautiful and you still get that flavor, but if you wish to fill the cookie all the way up with curd after baking, make a double batch of the filling and fill in all the spots after the cookies are baked and cool.<\/em><\/p>\n<hr \/>\n<h3><strong><span style=\"text-decoration: underline;\">Orange and Cherry Hamantaschen<\/span><\/strong><\/h3>\n<p>Yields 2\u00bd dozen<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<h4><span style=\"text-decoration: underline;\">Dough<\/span>:<\/h4>\n<ul>\n<li><em>2 cups flour<\/em><\/li>\n<li><em>\u00be teaspoon\u00a0baking powder<\/em><\/li>\n<li><em>1\/8 teaspoon salt<\/em><\/li>\n<li><em>\u00bd cup Earth Balance or butter, softened<\/em><\/li>\n<li><em>2\/3 cup sugar<\/em><\/li>\n<li><em>1 egg (reserve the egg white for assembling the cookie)<\/em><\/li>\n<li><em>1 egg yolk<\/em><\/li>\n<li><em>1 teaspoon vanilla<\/em><\/li>\n<li><em>2 teaspoons\u00a0orange zest<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Cherry Jam Filling<\/span>:<\/h4>\n<ul>\n<li><em>1\u00a0(17.5 oz. jar)\u00a0Cherry Preserves<br \/>\n(I love Trader Joe&#8217;s brand because whole cherries make up most of the jelly)<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Directions<\/span>:<\/h4>\n<ol>\n<li><span style=\"text-decoration: underline;\">Dough<\/span>: Stir together flour, baking powder and salt.\u00a0 In another bowl, beat butter until creamy.\u00a0 Beat in sugar until fluffy.\u00a0 Beat in egg, egg yolk, vanilla, and orange zest.\u00a0 Beat in flour mixture until combined.\u00a0 Divide dough in half and wrap each half in plastic wrap and refrigerate several hours or overnight.<\/li>\n<li dir=\"ltr\">Preheat oven to 375\u00b0F and line 2 large cookie sheets with parchment paper.<\/li>\n<li dir=\"ltr\">Roll out refrigerated dough on a lightly floured surface, about 1\/8 inch thick.\u00a0 Cut rounds, until dough is finished.<\/li>\n<li dir=\"ltr\">Fill the rounds with the cherry jam filling (see below). With your pinky, dip in egg white and lightly wet the edges around the <em>hamantaschen<\/em>.<\/li>\n<li dir=\"ltr\">Make the <em>hamantaschen<\/em> triangle shape by folding the bottom to make two corners and pinching the top to make the 3rd (requires both hands).<\/li>\n<li dir=\"ltr\">Bake for about 12 minutes until lightly browned.<\/li>\n<li><span style=\"text-decoration: underline;\">Filling<\/span>:\u00a0 Heat the cherry preserves on the stove until it starts to boil.\u00a0 Take off heat immediately and cool.<\/li>\n<\/ol>\n<hr \/>\n<h3><strong><span style=\"text-decoration: underline;\">Hazelnut Chocolate Hamantashen<\/span><\/strong><\/h3>\n<p>Makes 1 dozen<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<h4><span style=\"text-decoration: underline;\">Dough<\/span>:<\/h4>\n<ul>\n<li><em>1-1\/3 cups flour<\/em><\/li>\n<li><em>1\/3 cup cocoa<\/em><\/li>\n<li><em>\u00bd teaspoons\u00a0salt<\/em><\/li>\n<li><em>1 teaspoon\u00a0baking powder<\/em><\/li>\n<li><em>\u00bc cup Earth Balance or butter, softened<\/em><\/li>\n<li><em>\u00be cup sugar<\/em><\/li>\n<li><em>1 teaspoon\u00a0almond extract<\/em><\/li>\n<li><em>1 egg<\/em><\/li>\n<li><em>3 Tablespoons\u00a0coconut cream (the cream on top separates from the water on the bottom)<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\"><em>Filling<\/em><\/span><em>:<\/em><\/h4>\n<ul>\n<li><em>8 oz. dark chocolate, chopped ( I recommend Trader Joe&#8217;s brand)<\/em><\/li>\n<li><em>8 oz. coconut cream<\/em><\/li>\n<li><em>Dash of salt<\/em><\/li>\n<li><em>3 Tablespoons\u00a0Frangelico\u00a0<\/em><i>Liqueur<\/i><\/li>\n<li><em>\u00bd cup hazelnuts, toasted and chopped<\/em><\/li>\n<li><em>\u00bd cup whole hazelnuts<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Directions<\/span>:<\/h4>\n<h4><span style=\"text-decoration: underline;\">Dough<\/span>:<\/h4>\n<ol>\n<li>Stir together flour, cocoa, baking powder and salt.<\/li>\n<li>In another bowl, beat butter until creamy.\u00a0 Beat in sugar until fluffy.\u00a0 Beat in egg and almond extract.\u00a0 Beat in flour mixture until combined.<\/li>\n<li>Wrap dough in plastic wrap and refrigerate several hours or overnight.<\/li>\n<li>Preheat oven to 375\u00b0F and line 2 large cookie sheets with parchment paper.<\/li>\n<li>Roll out refrigerated dough on a lightly floured surface, about 1\/8 inch thick.\u00a0 Cut rounds, until dough is finished.\u00a0 Fill the rounds with the chocolate-hazelnut ganache filling (see below).<\/li>\n<li>With your pinky, dip in egg white and lightly wet the edges around the hamantashen. \u00a0Make the <em>hamantaschen<\/em> triangle shape by folding the bottom to make two corners and pinching the top to make the 3rd (requires both hands).<\/li>\n<li>Put a hazelnut on top of each hamantashen and bake for about 12 minutes until lightly browned.<\/li>\n<\/ol>\n<h4><span style=\"text-decoration: underline;\">Filling<\/span>:<\/h4>\n<ol>\n<li>Heat all of the ingredients together (except the hazelnuts) in a small saucepan till melted.\u00a0 Take off stove and add the chopped hazelnuts.<\/li>\n<\/ol>\n<hr \/>\n<p><em>Alison Barnett is currently enrolled part-time in the Institute of Culinary Education (ICE) in New York City and works full time for Synagogue Services at the Orthodox Union.
