Process just until mixed, using on\/off pulses. <em>Do not over-process.<\/em><\/li>\n<li>Divide dough into 4 pieces. Roll each piece on a lightly floured surface into a rectangle about 1\/8th inch thick. Using assorted cookie cutters, cut in different shapes. Dip each cookie lightly in sugar. Place sugar-side up on parchment-lined cookie sheets.<\/li>\n<li>Bake at 375\u00b0F for 8 to 10 minutes, until golden.<\/li>\n<\/ol>\n<h4><span style=\"text-decoration: underline;\"><em>Variation:\u00a0<\/em><\/span><strong><em><span style=\"text-decoration: underline;\">HAMAN\u2019S HATS<\/span>:<\/em><\/strong><\/h4>\n<ol>\n<li>Add \u00bc cup poppy seeds with dry ingredients.<\/li>\n<li>Roll out dough thinly, then cut in triangles using a fluted pastry wheel or pizza cutter.<\/li>\n<li>Dip in sugar and bake as directed. (Can be prepared in advance and refrigerated or frozen.)<\/li>\n<li>Preheat oven to 350\u00b0F.<\/li>\n<li>Divide dough into 4 equal pieces. Flour each piece of dough lightly. Roll out on a floured surface to \u00bc-inch thickness. Cut into 3-inch circles, using a round cookie cutter or a small juice glass.<\/li>\n<li>Place a spoonful of filling on each circle. Bring up 3 sides to meet, then pinch edges of dough together to form a triangle. Repeat with remaining dough and filling.<\/li>\n<li>Place on sprayed foil-lined cookie sheets. Brush with egg glaze.<\/li>\n<li>Bake for 25 to 30 minutes, until golden.<\/li>\n<\/ol>\n<hr \/>\n<h3><strong><span style=\"text-decoration: underline;\">Basic Oil Dough<\/span><\/strong><\/h3>\n<p><em>Makes enough to fill 4 dozen\u00a0hamantaschen<\/em><\/p>\n<p><em>This dough is excellent as a pareve cookie dough or for\u00a0hamantaschen. Try some of the scrumptious fillings (below).<\/em><\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>1 medium-sized seedless orange (thin-skinned)<\/em><\/li>\n<li><em>2 eggs<\/em><\/li>\n<li><em>\u00be cup sugar<\/em><\/li>\n<li><em>\u00bd cup canola oil<\/em><\/li>\n<li><em>2\u00be cups flour (approximately)<\/em><\/li>\n<li><em>2 teaspoons baking powder<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Cut orange in quarters but do not peel. Process in a food processor until fine, using the steel blade, about 25 seconds. Add eggs, sugar and oil. Process for 10 seconds. Add flour and baking powder.<\/li>\n<li>Process with several on\/offs, just until flour is blended into dough. Do not over-process. Dough will be fairly sticky. Remove from bowl with a rubber spatula onto a lightly floured surface. Use as directed.<\/li>\n<\/ol>\n<p><em>Adapted from The New Food Processor Bible by Norene Gilletz.<\/em><\/p>\n<hr \/>\n<h3><strong><span style=\"text-decoration: underline;\">Five-Fruit Filling<\/span><\/strong><\/h3>\n<p><em>Tip: Mixture can be prepared in advance and refrigerated for several days, or frozen.<\/em><\/p>\n<p>Makes\u00a0approx. 3 cups (1 cup filling is enough to fill 12 to 16 <em>hamentashen<\/em>)<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>1 medium seedless orange (thin-skinned)<\/em><\/li>\n<li><em>1 cup raisins<\/em><\/li>\n<li><em>1 cup pitted dates<\/em><\/li>\n<li><em>1 cup pitted prunes<\/em><\/li>\n<li><em>1 cup dried apricots<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Cut orange into chunks, but do not peel. Cut away both the navel and the stem end.<\/li>\n<li>In the processor, process orange until finely ground, about 20 seconds.<\/li>\n<li>Add remaining ingredients and process until finely ground, about 15 to 20 seconds. Scrape down sides of bowl as necessary.<\/li>\n<\/ol>\n<p><em>Adapted from Healthy Helpings by Norene Gilletz.<\/em><\/p>\n<hr \/>\n<h3><strong><span style=\"text-decoration: underline;\">Prune Filling<\/span><\/strong><\/h3>\n<p>Yields\u00a02\u00bd cups filling (enough for 4 to 5 dozen hamantaschen).<\/p>\n<p><em>Tips: Freezes well.\u00a0<\/em><em>Feel prunes with your fingertips to make sure they don\u2019t contain pits or you could damage the steel blade.<\/em><\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>1 medium seedless orange<\/em><\/li>\n<li><em>1 (12 oz.) package pitted prunes (see tip below)<\/em><\/li>\n<li><em>1\u00bd cups raisins<\/em><\/li>\n<li><em>\u00bc cup walnuts (optional)<\/em><\/li>\n<li><em>2 Tablespoons sugar or granular Splenda (optional)<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Cut orange in quarters but do not peel.<\/li>\n<li>Use a food processor fitted with the steel blade to prepare the filling. (If you have a smaller processor, you may have to do this in 2 batches.) You\u2019ll go nuts over them.<\/em><\/p>\n<p><em>Tip: Freezes well.<\/em><\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>1 cup margarine, cut in chunks<\/em><\/li>\n<li><em>2\u00bd cups flour<\/em><\/li>\n<li><em>\u00be cup finely ground almonds<\/em><\/li>\n<li><em>\u00bd cup sugar<\/em><\/li>\n<li><em>1 teaspoon\u00a0pure vanilla extract<\/em><\/li>\n<li><em>1\u00bd cups apricot jam<\/em><\/li>\n<li><em>2 Tablespoons\u00a0lemon juice<\/em><\/li>\n<li><em>\u00bd cup slivered almonds<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Preheat oven to 350\u00b0F. Spray a 9x13x2-inch baking pan with non-stick spray.<br \/>\n<span style=\"text-decoration: underline;\">For the base<\/span>:<\/li>\n<li>In a food processor fitted with the steel blade, process margarine, flour, ground almonds, sugar. and vanilla until crumbly, about 20 seconds.<\/li>\n<li>Reserve 1\u00bd cups of crumb mixture for topping. Press remaining mixture evenly into prepared pan.<\/li>\n<li>Bake for 20 minutes, until golden.<br \/>\n<span style=\"text-decoration: underline;\">For the topping<\/span>:<\/li>\n<li>Mix apricot jam with lemon juice; spread evenly over base. Crumble reserved crumb mixture over jam layer, and then sprinkle with slivered almonds.<\/li>\n<li>Bake 30 minutes longer, until golden.
