The Orthodox Union makes no endorsements or representations regarding kashrut certification of various products\/vendors referred to in her articles, blog or web site.<\/em><\/strong><\/p>\n<p>I\u2019m traveling a lot this year so my regular recipes that take time to prepare aren\u2019t going to cut it. I decided that a big pot of chili with all the fixings and a bunch of store bought snackie stuff (chips, pretzels and the other usual suspects) will round out the menu nicely.<\/p>\n<p>However, that decision being made, I have the difficult task of deciding whether this will be a bean or no-bean kind of chili menu. That brings us to the age-old question of what exactly is the definition of chili.<\/p>\n<p><a href=\"http:\/\/www.ou.org\/life\/files\/Chili.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-post-23865 wp-image-23967 alignright\" title=\"Chili\" src=\"http:\/\/www.ou.org\/life\/files\/Chili-300x199.jpg\" alt=\"\" width=\"300\" height=\"199\" srcset=\"https:\/\/www.ou.org\/life\/files\/Chili-300x199.jpg 300w, https:\/\/www.ou.org\/life\/files\/Chili.jpg 425w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>If you ask Wikipedia, they say the name is modified from the phrase \u201cchili con carne,\u201d which translates to \u201cpeppers with meat.\u201d For all intents and purposes, chili is a stew made with some combination of peppers, meat, tomatoes, a variety of spices&#8230;and beans if you want them.<\/p>\n<p>This hotly (pun intended) debated dish probably evolved from the cuisine of the early Spanish settlers.\u00a0 It was the perfect dish for using the less expensive tough cuts of meat that were available to those settling in or traveling through the Old West. Chili enthusiasts take their love of the dish to extreme heights with recipe contests, cook-off\u2019s and grudge-match cooking meets of the &#8220;beans versus no beans recipes, winner take all&#8221; variety (all of what I\u2019m not quite sure, but they do take this seriously).<\/p>\n<p>The perfect recipe is still being debated by cooks from Texas to New York and beyond. You will find my modest contributions to the lists of recipes below. Since there are beaucoup recipes available, I suggest you try them all.\u00a0Just remember: the hotter they are, the quicker you\u2019ll run out of antacids.<\/p>\n<p>Oh, and one last word: HEY PEYTON, GET BETTER QUICK.<\/p>\n<p><em>Tip: Use as lean a cut of meat as you can. You may also want to drain the fat from the cooked meat before you add the remaining ingredients. Greasy chili can really sneak up on you&#8230;if you catch my meaning!<\/em><\/p>\n<p><em>Tip: Several recipes call for beer; if you don\u2019t drink you can use apple juice instead.<\/em><\/p>\n<h3><strong><span style=\"text-decoration: underline;\">Vegetarian Chili<\/span><\/strong><span style=\"text-decoration: underline;\">\u00a0(pareve)<\/span><\/h3>\n<p>8 servings<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>3 Tablespoons olive oil<\/em><\/li>\n<li><em>1\u00bd cups chopped onion<\/em><\/li>\n<li><em>3 stalks chopped celery<\/em><\/li>\n<li><em>1 red bell pepper, diced<\/em><\/li>\n<li><em>4 Tablespoons chopped garlic<\/em><\/li>\n<li><em>2 (19 oz.) cans red kidney beans, drained and rinsed<\/em><\/li>\n<li><em>2 (19 oz.) can black beans, drained and rinsed<\/em><\/li>\n<li><em>1 envelope taco seasoning or \u00bc cup taco seasoning<\/em><\/li>\n<li><em>1 teaspoon basil<\/em><\/li>\n<li><em>\u00bd teaspoon oregano<\/em><\/li>\n<li><em>\u00bd teaspoon thyme<\/em><\/li>\n<li><em>1 (15 oz.) can tomato sauce<\/em><\/li>\n<li><em>3 cups vegetable broth<\/em><\/li>\n<li><em>1 (6 oz.) can tomato paste<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Heat oil in saucepan.\u00a0 Cook the onions and garlic until they are soft and translucent.\u00a0 Add beans, celery, red bell pepper, taco seasoning, basil, oregano and thyme.\u00a0 Mix to combine.<\/li>\n<li>Add the tomato sauce, vegetable broth and tomato paste.\u00a0 Mix to combine and cook covered for at least 1\u00bd hours. Stir every 15 minutes to prevent sticking.\u00a0 Season with salt and pepper.<\/li>\n<\/ol>\n<p><em>From my files, source unknown.<\/em><\/p>\n<hr \/>\n<h3><strong><span style=\"text-decoration: underline;\">Terrific Crock Pot Turkey Chili<\/span><\/strong><span style=\"text-decoration: underline;\">\u00a0(meat)<\/span><\/h3>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>2 lbs.\u00a0ground turkey<\/em><\/li>\n<li><em>1 cup chopped onion<\/em><\/li>\n<li><em>2 Tablespoons chopped garlic<\/em><\/li>\n<li><em>1 cup green peppers, diced<\/em><\/li>\n<li><em>1 cup chicken broth<\/em><\/li>\n<li><em>2 teaspoon dried cumin<\/em><\/li>\n<li><em>1 teaspoon dried oregano<\/em><\/li>\n<li><em>1 teaspoon chili powder<\/em><\/li>\n<li><em>\u00bd teaspoon salt<\/em><\/li>\n<li><em>1 teaspoon ground black pepper<\/em><\/li>\n<li><em>2 cooked and mashed potatoes<\/em><\/li>\n<li><em>2 (15 to 16 oz.) cans of kidney beans (not drained)<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>In a large skillet, brown ground turkey and drain.<\/li>\n<li>Add all ingredients to crock pot except the can of refried beans.\u00a0 Cover and cook on low 2 hours.<\/li>\n<li>Add the mashed potatoes to chili for thickening.\u00a0 Cover and cook on low for an additional 2 hours.<\/li>\n<\/ol>\n<p><em>From my files, source unknown.<\/em><\/p>\n<hr \/>\n<h3><strong><span style=\"text-decoration: underline;\">Chocolate Chipotle\u00a0Chili<\/span><\/strong><span style=\"text-decoration: underline;\">\u00a0(meat)<\/span><\/h3>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>2\u00bd lbs.\u00a0lean ground beef<\/em><\/li>\n<li><em>1 lb. chopped kosher spicy sausage (it\u2019s out there)<\/em><\/li>\n<li><em>4 garlic cloves, finely chopped<\/em><\/li>\n<li><em>1 cup finely chopped onion<\/em><\/li>\n<li><em>8 oz. tomato sauce<\/em><\/li>\n<li><em>8 oz. chipotle sauce (with tomato base)<\/em><\/li>\n<li><em>1 cup water<\/em><\/li>\n<li><em>1 bottle lite beer (12 oz.)<\/em><\/li>\n<li><em>3 Tablespoons chili powder<\/em><\/li>\n<li><em>2 Tablespoons instant beef bouillon<\/em><\/li>\n<li><em>2 Tablespoons cumin, ground<\/em><\/li>\n<li><em>2 Teaspoons paprika<\/em><\/li>\n<li><em>2 teaspoons oregano leaves<\/em><\/li>\n<li><em>2 teaspoons sugar<\/em><\/li>\n<li><em>\u00bd teaspoon coriander, ground<\/em><\/li>\n<li><em>1 teaspoon unsweetened cocoa<\/em><\/li>\n<li><em>1 teaspoon cornmeal<\/em><\/li>\n<li><em>1 teaspoon flour<\/em><\/li>\n<li><em>1 teaspoon warm water<\/em><\/li>\n<\/ul>\n<h4><strong><u>Instructions<\/u>:<\/strong><\/h4>\n<ol>\n<li>In a large stock pot, brown the meat (the beef and sausage) and drain off the fat. Return the meat to the pan and add the garlic and onion; cook and stir constantly until the onion is translucent.<\/li>\n<li>Add the tomato sauces, water, beer, chili powder, bouillon, cumin, paprika, oregano, sugar, coriander and cocoa. Mix well. Bring the chili to a boil then reduce heat to a simmer. Cover and cook for 2 hours.<\/li>\n<li>In a small bowl, stir together the cornmeal and flour, then add the warm water and mix well. Drain and add 1 chopped onion, 1 pack of chili seasoning and \u00bd can tomato sauce. Drain when cooked. Add the remaining ingredients and bring the mixture to a boil. Reduce the heat and cover.<\/li>\n<li>Stir every 20 minutes or so for the next 2 hours. Check to see if the meat is tender.
