I\u2019ve noticed that during this time, I smell like a fast food joint for eight days straight; you\u2019d think that I had deep fried my clothes, my shoes, everything I touch.<\/p>\n<p><strong>But why do we eat fried foods?<\/strong><\/p>\n<p>In the Geller house, because we love them, and we need no excuse to munch away. But the rest of the Jewish world has a reason \u2013 several, in fact.<\/p>\n<p>The simple answer is that foods fried in oil remind us of the oil that burned miraculously when the Maccabees purified and rededicated the Holy Temple in Jerusalem. Latkes and <em>sufganiot<\/em> are fried, which is why we eat those specifically on this holiday.<\/p>\n<p>Additionally, the Hebrew word <em>shemen<\/em>, meaning oil, contains the same letters as <em>shemoneh<\/em>, eight, which was the number of days that the miracle of the oil lasted. There are no coincidences in Jewish tradition, people.<\/p>\n<p>Mystically, both the Temple Menorah and the oil used to light it are associated with <em>chochmah<\/em>, Torah wisdom. The war between the Greeks and the Jews was essentially a war of ideas \u2013 which culture and whose wisdom would endure? The Greeks wanted everyone under their rule to value their philosophy and think exactly as they did, so they were violently opposed to the idea of G-d\u2019s wisdom and forbad the study of Torah. Many Jews obeyed these laws and were lured from Judaism by the attractive Greek culture. But Jews devoted to Torah just as adamantly refused to give in. Both sides knew it would be a fight to the death.<\/p>\n<p>Well, we all know who won. We still live by the Torah, and somehow, the Greeks stopped thinking. Divide between 6 bowls or plates and garnish each with a Tablespoon of sour cream to serve<\/li>\n<\/ol>\n<p>TIP: Add a sprinkle of taco chips to top off this fiesta with a crunch.<\/p>\n<hr \/>\n<h3><strong><span style=\"text-decoration: underline;\">Cheddar and Potato Latkes with Spiced Applesauce<\/span><\/strong><\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-post-23359 wp-image-23366\" title=\"Potato Cheddar Latke JG\" src=\"http:\/\/www.ou.org\/life\/files\/Potato-Cheddar-Latke-JG-300x202.jpg\" alt=\"\" width=\"300\" height=\"202\" srcset=\"https:\/\/www.ou.org\/life\/files\/Potato-Cheddar-Latke-JG-300x202.jpg 300w, https:\/\/www.ou.org\/life\/files\/Potato-Cheddar-Latke-JG-550x370.jpg 550w, https:\/\/www.ou.org\/life\/files\/Potato-Cheddar-Latke-JG.jpg 647w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>12 servings<\/p>\n<h4><strong><span style=\"text-decoration: underline;\">Times<\/span>:<\/strong><\/h4>\n<ul>\n<li>Prep time: 15 minutes<\/li>\n<li>Cook time: 50 minutes<\/li>\n<li>Ready time: 1 hour, 5 minutes<\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>2 medium Yukon gold potatoes (about 1 \u00bd pounds), unpeeled and cubed<\/em><\/li>\n<li><em>1 cup shredded cheddar cheese<\/em><\/li>\n<li><em>1 egg<\/em><\/li>\n<li><em>\u00bc cup matzah meal<\/em><\/li>\n<li><em>3 Tablespoons fresh chopped chives<\/em><\/li>\n<li><em>1 teaspoon Kosher salt<\/em><\/li>\n<li><em>4 Tablespoons canola or grape seed oil<\/em><\/li>\n<li><em>For applesauce:<\/em><\/li>\n<li><em>1 cup applesauce<\/em><\/li>\n<li><em>\u00bd teaspoon ground cinnamon<\/em><\/li>\n<li><em>\u00bc Teaspoon ground cloves<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>In a large saucepan, cover potatoes with water and bring to a boil. Reduce to a simmer and cook 15 minutes or until tender.<\/li>\n<li>While potatoes are cooking, combine applesauce and spices in a small bowl and set aside.<\/li>\n<li>When potatoes are tender, drain well and transfer to a large bowl. Mash with a potato masher leaving some lumps. Stir in cheese, egg, matzah meal, chives and salt.<\/li>\n<li>In a large skillet, heat oil over medium high heat. Scoop \u00bc cup of batter and carefully place in oil. Flatten to about \u00bd-inch thick with a spatula. Repeat to form 4 more latkes in your pan, being careful not to crowd the pan and cook for 4 to 6 minutes. Flip and cook 4 to 6 minutes more or until golden brown on both sides.<\/li>\n<li>Transfer to a paper towel lined baking sheet and repeat with remaining batter.<\/li>\n<li>Serve with spiced applesauce.<\/li>\n<\/ol>\n<hr \/>\n<h3><strong><span style=\"text-decoration: underline;\">Nutella-Banana Egg Rolls<\/span><\/strong><\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-post-23359 wp-image-23365\" title=\"Nutella Banana Eggroll JG\" src=\"http:\/\/www.ou.org\/life\/files\/Nutella-Banana-Eggroll-JG-300x202.jpg\" alt=\"\" width=\"300\" height=\"202\" srcset=\"https:\/\/www.ou.org\/life\/files\/Nutella-Banana-Eggroll-JG-300x202.jpg 300w, https:\/\/www.ou.org\/life\/files\/Nutella-Banana-Eggroll-JG-550x370.jpg 550w, https:\/\/www.ou.org\/life\/files\/Nutella-Banana-Eggroll-JG.jpg 647w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>8 servings<\/p>\n<h4><strong><span style=\"text-decoration: underline;\">Times<\/span>:<\/strong><\/h4>\n<ul>\n<li>Prep time: 15\u00a0minutes<\/li>\n<li>Cook time: 10\u00a0minutes<\/li>\n<li>Ready time: 25 minutes<\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>2 bananas, finely diced<\/em><\/li>\n<li><em>1 lemon, juiced<\/em><\/li>\n<li><em>2 Tablespoons sugar<\/em><\/li>\n<li><em>2 Tablespoons cornstarch<\/em><\/li>\n<li><em>\u00bd teaspoon cinnamon<\/em><\/li>\n<li><em>8 egg roll wrappers, defrosted<\/em><\/li>\n<li><em>8 Tablespoons nutella<\/em><\/li>\n<li><em>Canola oil for frying<\/em><\/li>\n<li><em>\u00bc cup confectioner\u2019s sugar<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>In a medium bowl, combine banana, lemon juice, sugar, cornstarch and cinnamon and mix well, smashing bananas slightly with the back of a wooden spoon.<\/li>\n<li>Lay out egg roll wrappers on a large work surface. Working with one wrapper at a time, spread 1 Tablespoon nutella across the wrapper, leaving about \u00bc-inch border around all edges. Spoon 3 Tablespoons banana mixture across the middle of the wrapper and lightly brush all the edges with water. Position the wrapper so that one point (corner) is closest to you. Fold that corner up just enough to cover the filling. Fold each side over to meet in the middle and roll up from the bottom. Brush final corner with water, and press lightly to seal. Transfer to a baking sheet seam side down. Repeat with remaining wrappers, nutella and filling.<\/li>\n<li>Heat about \u00bc-inch oil in a large skillet. Fry egg rolls 6 to 9 minutes or until golden brown on all sides, using tongs to brown evenly.
