Her husband had just been diagnosed with type II diabetes. She spent an hour with a dietitian at the hospital, but still didn\u2019t know what to make for dinner. Actually, what to make that was quick and easy and that her husband would eat.<\/p>\n<p>She\u2019s not alone. How many of you know someone, a friend, a family member or perhaps yourself, who are dealing with this disease? It seems to touch everyone. While promoting my latest book, <i>Mix \u2018n\u2019 Match Meals in Minutes for People with Diabetes<\/i>, I was surprised at <b>every<\/b> interview people came up to me for more information for someone they knew.<\/p>\n<p>Here\u2019s an astounding fact:<br \/>\nAccording to the American Diabetes Association (ADA), there are about <b>20.8 million<\/b> children and adults in the United States who have diabetes and <b>54 million<\/b> people who are pre-diabetic.<\/p>\n<p>And another point for all of us:<br \/>\nThe ADA says people with diabetes have the same nutritional needs as anyone else. We all need a healthful way to eat.<\/p>\n<p>Here\u2019s a quick, tasty recipe that will please the whole family.<\/p>\n<p>Cheers and bon appetite!<\/p>\n<p>SAUTEED TILAPIA WITH SAFFRON BROCCOLI AND POTATOES AND KIWIS WITH RASPBERRY SAUCE<\/p>\n<p>Steamed broccoli and potatoes take on new flavors with the addition of saffron. This side dish is the perfect accompaniment to a sauteed fish fillet with scallion topping.<\/p>\n<p>Helpful Hints:<\/p>\n<ul>\n<li>Bijol or turmeric can be substituted for saffron. Although the flavor will be altered, the dish is still very good<\/li>\n<li>Tilapia, also known as St. Peter\u2019s fish, is now being farm raised and is available in many supermarkets. It is a flaky-white fish. Any type of non-oily fish fillet can be substituted in this recipe<\/li>\n<li>Frozen raspberries are used for the dessert. Make sure they are frozen without sugar syrup<\/li>\n<li>Frozen broccoli can be used instead of fresh<\/li>\n<li>If you don&#8217;t have a steamer, use a large saucepan and place the potatoes and broccoli in a metal strainer or colander just large enough to sit in the pan with the bottom above the water level.<\/li>\n<\/ul>\n<p>Countdown:<\/p>\n<ul>\n<li>Start broccoli and potatoes<\/li>\n<li>Make dessert<\/li>\n<li>Saute fish<\/li>\n<li>Finish broccoli and potatoes.<\/li>\n<\/ul>\n<p>SHOPPING LIST<\/p>\n<p>Here are the ingredients you\u2019ll need for tonight\u2019s Dinner in Minutes.<\/p>\n<p>To buy:<\/p>\n<ul>\n<li>Grocery section: 1 small package saffron threads<\/li>\n<li>Frozen section: 1 package frozen raspberries (not in sugar syrup)<\/li>\n<li>Produce section: 1\/2 lb yellow potatoes, 3\/4 lb broccoli florets, 1 lemon, 1 small bunch scallions, 2 kiwi fruits,<\/li>\n<li>Seafood: 3\/4 lb Tilapia fillets (or other white fish fillet)<\/li>\n<\/ul>\n<p>Staples:<\/p>\n<ul>\n<li>Olive oil<\/li>\n<li>Salt<\/li>\n<li>Black peppercorns<\/li>\n<\/ul>\n<p>Listen to Linda&#8217;s <b><a title=\"Food Talk\" href=\"http:\/\/www.ouradio.org\/ouradio\/channel\/C1544\/\">Food Talk<\/a><\/b> show on OURadio.org!<\/p>\n<p><i><b>Linda Gassenheimer<\/b> is the author of fourteen cookbooks including her newest, <\/i>Prevention\u2019s Fit and Fast Meals in Minutes<i> and <\/i>Mix \u2018n Match Meals in Minutes for People with Diabetes<i>.
