While meatless meals are good for you, unless you\u2019re a true vegetarian often they become burdensome as well, we\u2019re carnivores, or rather as my son says, omnivores (he eats anything kosher that isn\u2019t nailed down, locked up or otherwise off limits because I need it for something else I\u2019m making).<\/p>\n<p>I look upon this time frame as a chance to test my skills and come up with recipes than don\u2019t mimic or approximate but rather stand on their own as really good substantial and different recipes that just happen to be dairy or pareve.<\/p>\n<p>The following recipes are terrific for the summer, the three weeks, and the nine days or just anytime you want to have something just a little different.<\/p>\n<h3><span style=\"text-decoration: underline;\"><strong>Grapes\u00a0and Cream Cheese Dip<\/strong>\u00a0(dairy)<\/span><\/h3>\n<p>Yields 2 cups<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>4 cups red or green seedless grapes<\/em><\/li>\n<li><em>\u00bd teaspoon cinnamon<\/em><\/li>\n<li><em>1 (8-oz.) package cream cheese (you can use low fat)<\/em><\/li>\n<li><em>2 tablespoons honey<\/em><\/li>\n<li><em>\u00bc toasted pecan pieces<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Place the grapes in the bowl of a food processor and process.<\/li>\n<li>Place the puree and the cinnamon in a saucepan and bring the mixture to a boil; reduce heat slightly and simmer for 20 minutes or until mixture thickens. Remove from the heat and let cool.<\/li>\n<li>In the bowl of the processor combine the cream cheese and honey.<\/li>\n<li>Spoon the cream cheese mixture into a serving bowl and then swirl in the grape mixture making sure you don\u2019t over mix.<\/li>\n<li>Top with toasted pecans.<\/li>\n<\/ol>\n<p><em>This is great with hot pretzels or toasted bagels.<\/em><\/p>\n<p><em>Submitted by Rachel Orneason Rock Island IL, source unknown<\/em><\/p>\n<hr \/>\n<h3><span style=\"text-decoration: underline;\"><strong>Grape Gazpacho<\/strong>\u00a0(dairy)<\/span><\/h3>\n<p>4 to 6 servings<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>\u00be to 1 cup seedless green grapes<\/em><\/li>\n<li><em>2 Tablespoons chopped fresh dill or 1 tablespoon dried<\/em><\/li>\n<li><em>1 cucumber, peeled and chopped<\/em><\/li>\n<li><em>1 Granny Smith apple, peeled, cored, and chopped<\/em><\/li>\n<li><em>3 green onions cut into pieces<\/em><\/li>\n<li><em>1\u00bd cup plain yogurt<\/em><\/li>\n<li><em>1\u00bd cup cold water<\/em><\/li>\n<li><em>Salt and pepper to taste<\/em><\/li>\n<li><em>Croutons<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>In the bowl of a food processor combine the grapes, dill, cucumber, apple and green onions.<\/li>\n<li>Process slightly and then add the buttermilk and water. Process to desired consistency.<\/li>\n<li>Place in a serving bowl, cover and refrigerate for 3 to 4 hours for the flavors to combine.<\/li>\n<\/ol>\n<p><em>Serve with croutons. <\/em><\/p>\n<p><em>Unknown source<\/em><\/p>\n<hr \/>\n<h3><strong style=\"text-decoration: underline;\">Pepper\u00a0and <\/strong><u>Portobellos\u00a0(dairy)<\/u><\/h3>\n<p>4 servings<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>4 large Portabella mushroom caps (remove the stems and dice them)<\/em><\/li>\n<li><em>\u00bd cup diced onions<\/em><\/li>\n<li><em>1 cup diced red pepper<\/em><\/li>\n<li><em>2 Tablespoons olive oil<\/em><\/li>\n<li><em>2 cups instant brown rice<\/em><\/li>\n<li><em>1 cup black beans<\/em><\/li>\n<li><em>4 oz. shredded mozzarella or sharp cheddar<\/em><\/li>\n<li><em>Garlic to taste<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Preheat oven to 350\u00b0F.<\/li>\n<li>Cook the rice according to the package direction and set it aside.<\/li>\n<li>In a skillet saute the onion, pepper, chopped stems and garlic in the olive oil. Do not overcook; the veggies should just be starting to wilt.<\/li>\n<li>Add the whole caps and just lightly cook them on both sides (about 1 minute on each side) and remove the caps to a greased 9X13 pan, gill side up.<\/li>\n<li>Add the cooked rice and black beans to the vegetable mixture, mix to combine heat thoroughly, about 3 minutes.<\/li>\n<li>Spoon the rice mixture into the mushroom caps and then top the vegetable mixture with the cheese.<\/li>\n<li>Bake for 20 minutes or until cheese is bubbly.<\/li>\n<\/ol>\n<hr \/>\n<h3><span style=\"text-decoration: underline;\"><strong>Red Pepper\u00a0Soup<\/strong>\u00a0(dairy)<\/span><\/h3>\n<p>4 to 6 servings<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>5 red peppers seeded and cut into bite sized pieces<\/em><\/li>\n<li><em>3 Tablespoon olive oil<\/em><\/li>\n<li><em>1 onion, diced<\/em><\/li>\n<li><em>1 Tablespoon minced garlic<\/em><\/li>\n<li><em>2 medium potatoes, diced<\/em><\/li>\n<li><em>2 teaspoon ground coriander<\/em><\/li>\n<li><em>1 teaspoon ground cumin<\/em><\/li>\n<li><em>1 to 2 teaspoons red pepper flakes sauce<\/em><\/li>\n<li><em>2 cups vegetable broth<\/em><\/li>\n<li><em>\u00be cup whipping cream or half-and-half<\/em><\/li>\n<li><em>Chopped green onions<\/em><\/li>\n<li><em>1 cup plain yogurt<\/em><\/li>\n<li><em>2 Tablespoons lime zest<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>In a large soup pot saute the peppers, potato and onions in the olive oil. Cook, stirring often, for about 8 to 10 minutes until the vegetables are soft.<\/li>\n<li>Add the garlic, coriander and cumin and continue cooking and stirring, for about 30 seconds. Add red pepper flakes and broth, and bring the soup to a boil.<\/li>\n<li>Add the cream and reduce the soup to for 8 to 10 minutes.<\/li>\n<li>I like to use my immersion blender at this point but you can use a blender. Puree the soup until you have the desired consistency, smoother or chunkier.<\/li>\n<li>In a bowl combine the yogurt and lime zest.<\/li>\n<li>Spoon the soup into 4 to 6 bowls.<\/li>\n<li>Place a dollop of the lime yogurt on top and then sprinkle the green onions on top.<\/li>\n<\/ol>\n<hr \/>\n<h3><span style=\"text-decoration: underline;\"><strong>Ancient Sweet Stuffed Peppers<\/strong>\u00a0(dairy or pareve)<\/span><\/h3>\n<p><em>I make this recipe all the time and everyone who\u2019s ever had it loves it.<\/em><\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>6 SUNSET\u00ae Ancient Sweets\u2122 Peppers<\/em><\/li>\n<li><em>1 cup vegetable broth<\/em><\/li>\n<li><em>2 teaspoon kosher salt<\/em><\/li>\n<li><em>1 Tablespoon olive oil<\/em><\/li>\n<li><em>2 Tablespoon lemon juice<\/em><\/li>\n<li><em>1 Tablespoon curry powder<\/em><\/li>\n<li><em>1 Tablespoon minced garlic<\/em><\/li>\n<li><em>\u00bc teaspoon cayenne pepper<\/em><\/li>\n<li><em>\u00be cup dry couscous<\/em><\/li>\n<li><em>1 cup canned garbanzo beans, drained well<\/em><\/li>\n<li><em>2 large ribs celery, diced \u00bc&#8221;<\/em><\/li>\n<li><em>3 green onions, thinly sliced<\/em><\/li>\n<li><em>1 cup dried cranberries, chopped<\/em><\/li>\n<li><em>\u00bd cup dried apricots, chopped<\/em><\/li>\n<li><em>1 cup chopped walnuts, toasted<\/em><\/li>\n<li><em>1 cup crumbled feta cheese (optional)<\/em><\/li>\n<li><em>1 egg, lightly beaten (optional)<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Preheat oven to 375\u00b0F. Spray a baking sheet with pan spray.<\/li>\n<li>Slit the peppers down the center of the top of the pepper, from stem to near the tip, leaving the stem intact. Gently spread peppers open and carefully remove seeds. Season the inside of the peppers lightly with salt.<\/li>\n<li>In a small saucepan, combine broth, salt, olive oil, lemon juice, curry powder, garlic and cayenne pepper. Bring to a quick boil over high heat.<\/li>\n<li>Stir in couscous. Immediately remove from heat, cover and let sit for 15 minutes.<\/li>\n<li>When couscous is cooked, remove lid and fluff with a fork.<\/li>\n<li>Place couscous in a large bowl, add the cranberries, apricots, walnuts, cheese and egg and toss to combine.
