The Orthodox Union makes no endorsements or representations regarding kashrut certification of various products\/vendors referred to in her articles, blog, or web site.<br \/>\n<\/b><\/i><\/p>\n<p>When you\u2019re planning for a Memorial Day barbecue or picnic it\u2019s usually all about who\u2019s bringing the paper plates, what kind of veggies to toss in the salad and is 3 pans of brownies enough to make it through the weekend. What you never plan for is rain.<\/p>\n<p>Yes rain. The buzz kill of all things picnic and barbecue. Rain ranks right up there with discovering poison ivy in your \u201c all natural\u201d flower arrangement, a red fruit punch dropped on your white carpeting by the neighbor kid you didn\u2019t invite but showed up anyway and my personal favorite and one I can actually lay claim to, accidentally locking yourself out of the house 20 minutes before everyone shows up.<\/p>\n<p>If you have the weather channel you\u2019ll probably have enough time to reconfigure a day that\u2019s supposed to be filled with gardening, opening the pool and firing up the grill. Instead you\u2019ll end up feeding\/entertaining people who were supposed to be outside watching the kids\u2019 cannon ball into the pool and not watching all 500 laps of the Indy 500 in your 9 foot by 9 foot family room.<\/p>\n<p>Never fear that a day will be ruined because of a little precipitation, if there is good food to be had, it will be a good day. Fabulous Memorial Day food can always be cooked inside on a grill pan or under the broiler. They are of course, made perfect when they are accompanied by baked beans.<\/p>\n<p>The following recipes for baked beans are all delicious and perfect for a lazy day inside or out. They run the gamut from super easy to OMG there are too many ingredients but OMG this is delicious. Happy Summer!<\/p>\n<h3><u><strong>Doctored\u00a0Baked Beans<\/strong>\u00a0(pareve)<\/u><\/h3>\n<p>Serves 4 to 8 depending on how many cans of beans you use<\/p>\n<p><em>This recipe is loosey goosey with the amounts. Tweak it to your heart\u2019s content.<\/em><\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>1 to 2 (28 oz.) cans baked beans<\/em><\/li>\n<li><em>1 to 2 onions, chopped<\/em><\/li>\n<li><em>1 to 2 Tablespoon oil<\/em><\/li>\n<li><em>\u00bd to 1 cup brown sugar<\/em><\/li>\n<li><em>2 or 3 tablespoons ketchup<\/em><\/li>\n<li><em>\u00bd to 1 cup hickory smoked and brown sugar barbecue sauce<\/em><\/li>\n<li><em>1 teaspoon mustard (optional)<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions &#8211; Oven<\/span>:<\/h4>\n<ol>\n<li>Preheat oven to 350\u00b0F.<\/li>\n<li>In an oven-proof pan saute onion in the oil and when it\u2019s soft add the mustard, ketchup, barbecue sauce and brown sugar.<\/li>\n<li>Mix to combine and then stir in the beans. Mix to combine.<\/li>\n<li>Cover the pan and bake for 30 minutes.<\/li>\n<\/ol>\n<h4><span style=\"text-decoration: underline;\">Instructions &#8211;\u00a0<\/span><span style=\"text-decoration: underline;\">In the Microwave<\/span>:<\/h4>\n<ol>\n<li>If you\u2019re a microwave kind of person just dump everything in a large microwavable bowl<\/li>\n<li>Mix to combine<\/li>\n<li>Cover with plastic wrap and microwave for about 15 minutes or until the mixture is bubbling and hot throughout.<\/li>\n<\/ol>\n<hr \/>\n<h3><u><strong>Easy Onion\u00a0and Beef Baked Beans<\/strong>\u00a0(meat)<\/u><\/h3>\n<p>6 to 8 servings<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>1 lb. ground beef<\/em><\/li>\n<li><em>1 envelope onion soup mix<\/em><\/li>\n<li><em>2 (16 oz.) cans baked beans<\/em><\/li>\n<li><em>1 (16 oz.) can kidney beans, drained<\/em><\/li>\n<li><em>\u00bc cup brown sugar<\/em><\/li>\n<li><em>2 tablespoon molasses<\/em><\/li>\n<li><em>1 cup catsup<\/em><\/li>\n<li><em>\u00bd cup cold water<\/em><\/li>\n<li><em>2 teaspoon apple cider vinegar<\/em><\/li>\n<li><em>2 Tablespoon mustard<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>In a large pot brown the meat.<\/li>\n<li>Drain the excess fat and add the remaining ingredients and mix to combine.<\/li>\n<li>Cover and cook over a medium heat for 30 to 40 minutes, stirring occasionally. You can also preheat an oven to 375 and bake the beans in a covered container for 30 to 40 minutes.<\/li>\n<\/ol>\n<p><em>Submitted by George Manfrid Indianapolis IN, Modified from <a href=\"http:\/\/cooks.com\">cooks.com<\/a><\/em><\/p>\n<hr \/>\n<h3><u><strong>Paula Deen\u2019s Southern Baked Beans<\/strong>\u00a0(meat)<\/u><\/h3>\n<p>6 to 8 servings<\/p>\n<p><em>If it\u2019s a Paula Deen recipe you can expect luscious and delicious and lots of calories.<\/em><\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>1 onion, chopped<\/em><\/li>\n<li><em>2 cans baked beans<\/em><\/li>\n<li><em>3 Tablespoons yellow mustard<\/em><\/li>\n<li><em>\u00bc cup maple syrup<\/em><\/li>\n<li><em>\u00bc cup light brown sugar<\/em><\/li>\n<li><em>\u00bc cup ketchup<\/em><\/li>\n<li><em>1 Tablespoon lemon juice<\/em><\/li>\n<li><em>\u00bd lb.\u00a0kosher breakfast beef strips, cut into \u00bd-inch pieces<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Preheat oven to 350\u00b0F<\/li>\n<li>In a Dutch oven, combine onion, baked beans, mustard, maple syrup, light brown sugar, ketchup and lemon juice; mix well.<\/li>\n<li>Top with the kosher breakfast beef pieces.<\/li>\n<li>Bake, covered, 45 to 60 minutes.<\/li>\n<\/ol>\n<p><em>Modified from a Paula Dean recipe<\/em><\/p>\n<hr \/>\n<h3><u><strong>Hot\u00a0Dog\u00a0and Baked Bean Casserole<\/strong>\u00a0(Meat)<\/u><\/h3>\n<p>6 servings<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>1 green bell pepper cut in \u00bd-inch pieces<\/em><\/li>\n<li><em>1 large onion, coarsely chopped<\/em><\/li>\n<li><em>2 Tablespoons oil<\/em><\/li>\n<li><em>1 can (about 16 oz.) baked beans<\/em><\/li>\n<li><em>1 (12 to 15 oz.) can whole kernel corn, drained<\/em><\/li>\n<li><em>1 (8 oz.) can tomato sauce<\/em><\/li>\n<li><em>2 Tablespoons prepared yellow mustard<\/em><\/li>\n<li><em>2 teaspoons chili powder<\/em><\/li>\n<li><em>1 lb.\u00a0hot dogs cut in \u00bd-inch pieces<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Preheat oven 350\u00b0F<\/li>\n<li>In a skillet, saut\u00e9 onion and green pepper in vegetable oil for about 5 minutes, or until onion is tender<\/li>\n<li>Stir in beans, corn, tomato sauce, chili powder, and mustard<\/li>\n<li>Add sliced hot dogs and stir to blend ingredients<\/li>\n<li>Pour hot dog and beans mixture into a lightly greased 2-quart casserole.<\/li>\n<li>Bake, uncovered for 25 minutes.<\/li>\n<\/ol>\n<p><em>Modified from <a href=\"http:\/\/southernfood.com\">southernfood.com<\/a><\/em><\/p>\n<hr \/>\n<h3><u><strong>Tomato\u00a0and Hamburger Baked Beans<\/strong>\u00a0(Meat)<\/u><\/h3>\n<p>8 to 10 servings<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>1 lb. ground beef<\/em><\/li>\n<li><em>2\u00a0(28 oz.) cans of baked beans<\/em><\/li>\n<li><em>1\u00a0(15 oz.) can of diced tomatoes<\/em><\/li>\n<li><em>\u00bd cup brown sugar<\/em><\/li>\n<li><em>1 sliced onion<\/em><\/li>\n<li><em>4 to 6 slices of kosher breakfast beef<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>In a skillet brown the hamburger and then drain the excess fat.<\/li>\n<li>In A 5-qt. casserole dish mix 1 can of the baked beans, diced tomatoes and brown sugar.<\/li>\n<li>Add the cooked ground beef but don\u2019t mix it in.<\/li>\n<li>Layer the onions on top of the meat and then layer the kosher breakfast beef on top of the onion.<\/li>\n<li>Spoon the remaining can of baked beans over the top of the kosher breakfast beef and cook, uncovered for 50 to 60 minutes.<\/li>\n<\/ol>\n<hr \/>\n<h3><u><strong>Root Beer Baked Beans<\/strong>\u00a0(Meat)<\/u><\/h3>\n<p>6 servings<\/p>\n<p><em>This recipe was sent to me by a reader who swears they are the best she\u2019s ever eaten<\/em><\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>3 kosher breakfast beef slices, cooked and crumbled<\/em><\/li>\n<li><em>1 small onion, diced<\/em><\/li>\n<li><em>2 (16-oz.) cans baked beans<\/em><\/li>\n<li><em>\u00bd cup root beer (not diet)<\/em><\/li>\n<li><em>\u00bc cup hickory-smoked barbecue sauce<\/em><\/li>\n<li><em>\u00bd teaspoon dry mustard<\/em><\/li>\n<li><em>1\/8 teaspoon hot sauce<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Preheat oven to 400\u00b0F<\/li>\n<li>In a skillet cook the kosher breakfast beef until its crisp and then remove it and crumble it<\/li>\n<li>Drain all but about 2 tablespoons of grease from the pan<\/li>\n<li>Saute the diced onion the kosher breakfast beef grease until they are tender, about 5 minutes<\/li>\n<li>In a large baking dish combine the cooked onion, crumbled kosher breakfast beef, beans, root beer, barbecue sauce mustard and hot sauce<\/li>\n<li>Bake, uncovered, 55 minutes or until sauce is thickened<\/li>\n<\/ol>\n<p><i>Modified from Southern Living OCTOBER 2004<\/i><\/p>\n<hr \/>\n<p><i>Eileen Goltz is a freelance kosher food writer who was born and raised in the Chicago area.
