{"id":11975,"date":"2008-08-27T21:29:00","date_gmt":"2008-08-27T21:29:00","guid":{"rendered":"http:\/\/production.ou.org\/life\/other\/fricasee\/"},"modified":"2017-04-14T05:16:39","modified_gmt":"2017-04-14T10:16:39","slug":"fricasee","status":"publish","type":"post","link":"https:\/\/www.ou.org\/life\/food\/recipes\/fricasee\/","title":{"rendered":"Fricassee"},"content":{"rendered":"<p>Try this one out &#8211;<\/p>\n<h4><span style=\"text-decoration: underline;\"><b>Ingredients<\/b><\/span>:<\/h4>\n<ul>\n<li><em>1 Tablespoon Margarine<\/em><\/li>\n<li><em>1\u00bd teaspoons vegetable oil<\/em><\/li>\n<li><em>1 chicken, about 3 lbs. each, cut into serving pieces<\/em><\/li>\n<li><em>3 carrots, cooked, cut into 1 inch pieces<\/em><\/li>\n<li><em>2 celery ribs, cut into 1 inch pieces<\/em><\/li>\n<li><em>1 onion, cooked, cut into wedges<\/em><\/li>\n<li><em>2 Tablespoons all purpose flour<\/em><\/li>\n<li><em>1\u00bd cups chicken stock<\/em><\/li>\n<li><em>1 teaspoon\u00a0dried marjoram<\/em><\/li>\n<li><em>1 Tablespoon fresh chives or parsley, minced<\/em><\/li>\n<\/ul>\n<p><em>Also, make the meatball mix that you usually make at home and form into mini balls.<\/em><\/p>\n<h4><span style=\"text-decoration: underline;\"><b>Instructions<\/b><\/span>:<\/h4>\n<ol>\n<li>Melt Margarine and oil in a large heavy skillet over medium-high heat.<\/li>\n<li>Season chicken with salt and pepper to taste and cook 5-7 minutes, turning occasionally, until browned on both sides.<\/li>\n<li>Discard all but 1 Tablespoon drippings.<\/li>\n<li>Add next 3 ingredients (carrot, celery, onion) and cook 1 minute.<\/li>\n<li>Stir in flour and cook 1 minute until bubbly.<\/li>\n<li>Stir in stock and marjoram. At this point, add your mini meatballs.<\/li>\n<li>Cover pan, reduce heat to medium-low, and cook 40 minutes, or until chicken is cooked throughout.<\/li>\n<li>Serve with pan juices and sprinkled with chives.<\/li>\n<\/ol>\n<p>Enjoy!!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Try this one out &#8211;
