These &#8220;sides&#8221; are an excellent alternative to more traditional kugels and lower in fat and calorie content. They are a great accompaniment to any meat, fish or dairy meals; and are especially nice for the third meal on those long summer Shabbat afternoons.<\/p>\n<p>This first one my mother just invented a few weeks ago, while she was here visiting. She wanted to entertain my sisters and me, instead of having us do the work. This is what she came up with, and it&#8217;s so savory and delicious that my sister and brother in law felt as if they had just sat down to an expensive meal at an Italian restaurant\u2026<\/p>\n<h3><span style=\"text-decoration: underline;\"><b>Savory Spaghetti Garlic\u00a0and Tomato Salad<\/b><\/span><\/h3>\n<p>5\u00a0to 6 servings<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>1 (16 oz.) package (about 500 g)\u00a0thin spaghetti noodles<\/em><\/li>\n<li><em>2 heads fresh garlic, minced<\/em><\/li>\n<li><em>\u00bc cup olive oil<\/em><\/li>\n<li><em>1 cup fresh parsley leaves, chopped<\/em><\/li>\n<li><em>1 cup fresh basil, chopped (or 2 teaspoons dried, although fresh tastes and looks better)<\/em><\/li>\n<li><em>1 cup dry white wine<\/em><\/li>\n<li><em>2 medium, red but firm tomatoes, cubed<\/em><\/li>\n<li><em>Salt and black pepper to taste<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Add water to a large pot, and bring to a boil. Into this water, also add some oil and salt before adding in all the spaghetti noodles.<\/li>\n<li>Cook as directed on the package.<\/li>\n<li>Drain immediately and rinse to cool and stop the cooking process, and keep the noodles from sticking. Set aside.<\/li>\n<li>While the noodles are cooking, add all that fresh garlic (yes, I know it&#8217;s a lot but it is really incredible this way) to the olive oil in a large pan. Start to saute it until it is beginning to turn golden. Add in the fresh herbs and saute another few minutes to release the flavor of the herbs. Add in the wine and cook this up on a medium-low flame so liquid starts to reduce.<\/li>\n<li>Keep stirring and watching the mixture all the time. When it is mostly reduced, add in the chopped tomatoes and cook another 15 minutes. Turn off the flame.<\/li>\n<li>Add this mixture to the prepared spaghetti noodles.<\/li>\n<li>Season with the salt and pepper and then toss together.<\/li>\n<li>It is best to leave the salad to sit about 30 minutes at room temp before serving.<\/li>\n<\/ol>\n<hr \/>\n<p><em>Here&#8217;s another one my mother frequently likes to serve as a cold or room temperature side dish to holiday and festive meals\u2026<\/em><\/p>\n<h3><span style=\"text-decoration: underline;\"><b>Israeli Couscous\u00a0Salad<\/b><\/span><\/h3>\n<p>6 servings<\/p>\n<ul>\n<li><em>1 cup bulgur wheat<\/em><\/li>\n<\/ul>\n<p>Let it steep in one cup boiled water and sit covered until all the water is absorbed, about 30 minutes. Fluff it with a fork, and continue\u2026<\/p>\n<ul>\n<li><em>1 Tablespoon onion powder<\/em><\/li>\n<li><em>1 Tablespoon\u00a0garlic powder<\/em><\/li>\n<li><em>\u00bd teaspoon salt<\/em><\/li>\n<li><em>\u00bc teaspoon pepper<\/em><\/li>\n<li><em>1 Tablespoon olive oil<\/em><\/li>\n<li><em>\u00bd of a fresh lemon, juiced<\/em><\/li>\n<\/ul>\n<p>Toss together with the bulgur.<\/p>\n<p>Add in:<\/p>\n<ul>\n<li>1 small can about 4 -5 oz of corn, drained<\/li>\n<li>Tear apart a large bunch of fresh dill and use all the little leaves.<\/li>\n<\/ul>\n<p>Toss together and refrigerate.<\/p>\n<p><em>Looks beautiful and serves very nicely for several days.<\/em><\/p>\n<hr \/>\n<h3><span style=\"text-decoration: underline;\"><b>Barley\u00a0and Raisin\u00a0Salad<\/b><\/span><\/h3>\n<p>4 servings<\/p>\n<p><em>Most people think of barley only as cholent food, but this is a healthy and tasty way to incorporate this important grain in your Shabbos and holiday meals, even if you&#8217;re not having cholent.<\/em><\/p>\n<p>1 cup barley, cooked up with 2\u00bd to\u00a03 cups of water until it is soft and edible (about 45 minutes to one hour). Drain whatever liquid is left over in this barley and place the barley in a plastic mixing bowl.<\/p>\n<p>Add to this:<\/p>\n<ul>\n<li><em>\u00bd cup golden raisins<\/em><\/li>\n<li><em>2 carrots, peeled and shredded<\/em><\/li>\n<li><em>1 teaspoon salt<\/em><\/li>\n<li><em>\u00bc teaspoon pepper<\/em><\/li>\n<li><em>1 tablespoon sugar<\/em><\/li>\n<li><em>2 tablespoons olive oil<\/em><\/li>\n<li><em>2 teaspoons lemon juice<\/em><\/li>\n<li><em>\u00bc teaspoon parsley flakes<\/em><\/li>\n<li><em>Optional: \u00bc cup blanched, slivered almonds<\/em><\/li>\n<\/ul>\n<p>Toss and mix all ingredients together. Serve cold or at room temperature.<\/p>\n<hr \/>\n<h3><span style=\"text-decoration: underline;\"><b>Sweet\u00a0and Tangy Bulgur\u00a0Fruit Salad<\/b><\/span><\/h3>\n<p>4 servings<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>1 cup bulgur<\/em><\/li>\n<li><em>1 cup water<\/em><\/li>\n<li><em>1 onion, diced<\/em><\/li>\n<li><em>1 clove garlic, diced<\/em><\/li>\n<li><em>4 sprigs fresh parsley, chopped<\/em><\/li>\n<li><em>\u00bc teaspoon\u00a0pepper<\/em><\/li>\n<li><em>1 Tablespoons canola or olive oil<\/em><\/li>\n<li><em>3 dried dates, chopped, optional<\/em><\/li>\n<li><em>6 dried apricots, peaches, or pears, chopped<\/em><\/li>\n<li><em>\u00bc cup pine nuts<\/em><\/li>\n<li><em>2 Tablespoons slivered almonds<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Let bulgur steep in one cup boiled water and let it sit covered until all the water is absorbed, about 30 minutes.<\/li>\n<li>In a separate pan, saute the onion and garlic in the oil until clear.
