And they are good enough to eat all year long&#8230;<\/em><\/p>\n<h3><span style=\"text-decoration: underline;\"><b>Eggplant Nicoise<\/b><b> (<\/b><em>Dairy)<\/em><\/span><\/h3>\n<p>8 to 10 servings<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>1\/3 cup olive oil<\/em><\/li>\n<li><em>2 cloves garlic, minced<\/em><\/li>\n<li><em>1 large onion, diced<\/em><\/li>\n<li><em>2 medium green pepper, diced<\/em><\/li>\n<li><em>4 medium sized zucchini, sliced<\/em><\/li>\n<li><em>1 large eggplant, with the skin on, cubed<\/em><\/li>\n<li><em>5 ripe tomatoes, cut up<\/em>\n<ul>\n<li><em>(\u00bd cup tomato sauce can be substituted for the fresh tomatoes if necessary)<\/em><\/li>\n<\/ul>\n<\/li>\n<li><em>1 teaspoon salt<\/em><\/li>\n<li><em>\u00bc teaspoon pepper<\/em><\/li>\n<li><em>1 teaspoon oregano<\/em><\/li>\n<li><em>\u00bc teaspoon basil<\/em><\/li>\n<li><em>\u00bd teaspoon parsley flakes<\/em><\/li>\n<li><em>1 cup feta cheese, cubed, or small cubes of any other salty white cheese<\/em><\/li>\n<li><em>2 additional Tablespoons extra virgin olive oil, optional<\/em><\/li>\n<li><em>3 green olives, sliced into rings (optional)<\/em><\/li>\n<li><em>3 black olives, sliced into rings, (optional)<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>In a large, flat pan, add the olive oil, garlic and onions. Start to saut\u00e9 them<\/li>\n<li>Add in the green peppers and continue to saut\u00e9. Add in the zucchini, then the eggplant and on top of that, the tomatoes<\/li>\n<li>Cover the pan and allow them to cook together for 30 minutes, until they start\u00a0to become tender<\/li>\n<li>Sprinkle the seasonings over all, and cover the pan again. Simmer 10 more minutes. Turn off the flame.<\/li>\n<li>Serving:\n<ol>\n<li><span style=\"text-decoration: underline;\">To serve hot:<\/span>\u00a0Spoon into a serving dish and top the center with the cubed feta cheese.<br \/>\nDrizzle a small amount of olive oil over the feta cheese, then arrange the olive rings on top of that, and serve.<\/li>\n<li><span style=\"text-decoration: underline;\">To serve cold:<\/span>\u00a0Place in the refrigerator in a plastic container or a glass serving dish until use.<\/li>\n<\/ol>\n<\/li>\n<li>Arrange the cubed cheese on top, and the olives and drizzle over the olive oil as suggested.<\/li>\n<\/ol>\n<p><em>Suggestion:<\/em><\/p>\n<p><em>You can add a small amount of chopped, fresh parsley over the cheese\/ olive oil directly before serving for a nicer look.<\/em><\/p>\n<hr \/>\n<h3><span style=\"text-decoration: underline;\"><b>Sweet and\u00a0Tangy\u00a0Spinach Grapefruit Salad<\/b><\/span><\/h3>\n<p>6 servings<\/p>\n<p><em>Here&#8217;s a nice springy, tangy fresh salad that will put you and your family into the spring \u2013 Pesach spirit\u2026even if it&#8217;s still snowing in your area right now!<\/em><\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<h4><span style=\"text-decoration: underline;\">Salad:<\/span><\/h4>\n<ul>\n<li><em>1 head fresh spinach leaves, washed well and spun dry, shredded<\/em><\/li>\n<li><em>1 firm English cucumber, cubed<\/em><\/li>\n<li><em>20 cherry plum tomatoes<\/em><\/li>\n<li><em>1 small red Spanish onion, sliced into half rings<\/em><\/li>\n<li><em>\u00bd white grapefruit pieces, completely peeled, chunked<\/em><\/li>\n<li><em>\u00bd red grapefruit pieces, completely peeled, chunked<\/em><\/li>\n<li><em>1\/3 cup slivered almonds<\/em><\/li>\n<li><em>\u00bc cup pine nuts, optional<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Dressing<\/span>:<\/h4>\n<ul>\n<li><em>\u00bc cup fresh lemon juice<\/em><\/li>\n<li><em>\u00bc cup olive oil<\/em><\/li>\n<li><em>\u00bd teaspoon\u00a0salt<\/em><\/li>\n<li><em>\u00bc teaspoon\u00a0pepper<\/em><\/li>\n<li><em>1 teaspoon\u00a0granulated garlic powder<\/em><\/li>\n<li><em>1 Tablespoon sugar<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>In a small blender, blend together the dressing ingredients until very well combined. Set aside until use.<\/li>\n<\/ol>\n<h4><span style=\"text-decoration: underline;\">Salad<\/span>:<\/h4>\n<p>Directly before serving, arrange the salad as follows:<\/p>\n<ol>\n<li>In a large, pretty glass bowl, place all the shredded spinach leaves.<\/li>\n<li>Sprinkle the diced cucumbers on top of that, and then cherry plum tomatoes. To make it look even more elegant, slice each cherry plum tomato in half the short way and arrange them, cut side facing outwards, in a ring, on the edge of the glass. Their outer, cut side will be &#8216;stuck onto&#8217; the glass&#8217;s edge, so that it&#8217;s visible from the outside when you serve it.<br \/>\nThis serves very nicely also in a medium sized glass trifle bowl<\/li>\n<li>Arrange the sliced onion rings all over the top. Place the grapefruit pieces over all. Toss very slightly with your fingers<\/li>\n<li>Sprinkle on the almonds and pine nuts. Drizzle the dressing over all and serve.<br \/>\nWatch the compliments flow!<\/li>\n<\/ol>\n<hr \/>\n<p><em>These next two recipes, and pictures, are excerpted from my Pesach, gluten free cookbook &#8220;<b>A Taste of Tradition<\/b>&#8221; (Feldheim Publishers), now on sale online as well as in bookstores everywhere.<\/em><\/p>\n<h3><span style=\"text-decoration: underline;\"><b>Mock Salmon\u00a0Spread<\/b>\u00a0(Page 38)<\/span><\/h3>\n<p>6 servings<\/p>\n<p><em>This is a really different, versatile and very tasty fish idea.<\/em><\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<div style=\"float: right; padding-left: 7px; width: 200px; padding-bottom: 7px;\">\n<figure class=\"thumbnail wp-caption alignright\" style=\"width: 200px\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/s3.amazonaws.com\/ou-images\/content\/AnshPesachScoop200.jpg\" alt=\"image\" width=\"200\" height=\"150\" border=\"0\" \/><figcaption class=\"caption wp-caption-text\">\u00a9 2008 Tamar Ansh<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<\/div>\n<ul>\n<li><em>2.5 lbs. (1 kg) Nile perch, flounder, sole or baccala (whiting), cleaned<\/em><\/li>\n<li><em>Water to cover the fish in the pot<\/em><\/li>\n<li><em>\u00be cup mayonnaise\u00a0(best when it&#8217;s been homemade and that recipe is on page 12\u2026)<\/em><\/li>\n<li><em>\u00be cup tomato sauce<\/em><\/li>\n<li><em>1 teaspoon salt<\/em><\/li>\n<li><em>\u00bd teaspoon pepper<\/em><\/li>\n<li><em>1 Tablespoon sugar<\/em><\/li>\n<li><em>2 Tablespoons vinegar<\/em><\/li>\n<li><em>1 Tablespoon lemon juice<\/em><\/li>\n<li><em>1 small onion, diced<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Place the fish in a large pot, with water to cover, and boil until the fish is done, about 30 minutes. Drain and rinse off the fish.<\/li>\n<li>When it is a bit cooled down, flake it through by hand to remove any remaining bones.<\/li>\n<li>Place fish in the food processor in two batches, along with the mayonnaise, tomato sauce, salt, pepper, sugar, vinegar and lemon juice.<\/li>\n<li>Process until completely smooth. Remove the fish to a large Tupperware container.<\/li>\n<li>Mix in the diced onion.<\/li>\n<li>Refrigerate overnight before serving.<\/li>\n<\/ol>\n<p><em>Sever scooped over a bed of lettuce and decorated with other fresh vegetables, as shown. No one will ever know it is not real salmon spread!<\/em><\/p>\n<hr \/>\n<h3><span style=\"text-decoration: underline;\"><b>Famous\u00a0Brownies<\/b>\u00a0(Page 98)<\/span><\/h3>\n<p>This one is one of our family&#8217;s all time favorite desserts; one more tried and true recipe that I have been making, and sharing, for years.<\/p>\n<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<h4><span style=\"text-decoration: underline;\">Brownies:<\/span><\/h4>\n<div style=\"float: right; padding-left: 7px; width: 200px; padding-bottom: 7px;\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/s3.amazonaws.com\/ou-images\/content\/AnshPesachBrownies200.jpg\" alt=\"image\" width=\"200\" height=\"150\" border=\"0\" \/><br \/>\n<span style=\"font-family: arial; font-size: xx-small;\">(c) 2008 Tamar Ansh<\/span><\/div>\n<ul>\n<li><em>6 eggs<\/em><\/li>\n<li><em>2-2\/3 cups sugar<\/em><\/li>\n<li><em>1\u00bd cups potato starch<\/em><\/li>\n<li><em>\u00be cup cocoa<\/em><\/li>\n<li><em>\u00be cup oil<\/em><\/li>\n<li><em>1 teaspoon vanilla<\/em><\/li>\n<li><em>1 cup walnuts, coarsely chopped<\/em><\/li>\n<li><em>\u00bd cup coconut, optional<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Chocolate Glaze:<\/span><\/h4>\n<ul>\n<li><em>1 cup powdered sugar<\/em><\/li>\n<li><em>2 Tablespoons oil<\/em><\/li>\n<li><em>2 Tablespoons hot water<\/em><\/li>\n<li><em>2 Tablespoons cocoa<\/em><\/li>\n<\/ul>\n<h4><u>Instructions<\/u>:<\/h4>\n<ol>\n<li>Preheat the oven to 350\u00b0F (180\u00b0C).<\/li>\n<li>Place all the ingredients, except for the nuts and coconut, into a large bowl. Mix together until smooth. Add in the nuts and optional coconut.<\/li>\n<li>Pour this out into a 9&#215;13 pan that has been lined with parchment baking paper. Bake for 25-30 minutes, until a cake tester inserted into the brownies&#8217; center comes out mostly clean, and the top is light brown and crispy. Do not overbake as then it will become too dry.<\/li>\n<li>Remove from oven immediately and allow it to cool completely.<\/li>\n<li>In a separate small bowl, mix together the glaze ingredients with a spoon, until smooth.<\/li>\n<li>Spread over the cooled brownies. Allow it to set for a few minutes and then slice.<\/li>\n<\/ol>\n<p><em>Freezes wonderfully, even glazed. If you freeze it when already glazed, slice them first.
