{"id":10546,"date":"2007-02-14T06:50:00","date_gmt":"2007-02-14T06:50:00","guid":{"rendered":"http:\/\/production.ou.org\/life\/other\/curried_chicken\/"},"modified":"2017-04-12T02:51:06","modified_gmt":"2017-04-12T07:51:06","slug":"curried_chicken","status":"publish","type":"post","link":"https:\/\/www.ou.org\/life\/food\/curried_chicken\/","title":{"rendered":"Curried Chicken"},"content":{"rendered":"<h4><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/h4>\n<ul>\n<li><em>2 Tablespoons vegetable oil<\/em><\/li>\n<li><em>1 Tablespoon margarine<\/em><\/li>\n<li><em>6 chicken breasts skinless (or use cutlets)<\/em><\/li>\n<li><em>Flour for dusting<\/em><\/li>\n<li><em>Salt and pepper<\/em><\/li>\n<li><em>1 cup chopped onion<\/em><\/li>\n<li><em>3 teaspoons curry<\/em><\/li>\n<li><em>\u00bd teaspoon cayenne pepper<\/em><\/li>\n<li><em>1 teaspoon cinnamon<\/em><\/li>\n<li><em>1 teaspoon cumin<\/em><\/li>\n<li><em>2 carrots, peeled and sliced thin on diagonal<\/em><\/li>\n<li><em>1\u00bd cups chicken soup<\/em><\/li>\n<li><em>1 cup broccoli florets<\/em><\/li>\n<li><em>\u00bc cup pareve cream<\/em><\/li>\n<li><em>\u00be cup frozen peas<\/em><\/li>\n<\/ul>\n<h4><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/h4>\n<ol>\n<li>Heat oil in large skillet and stir in margarine to melt<\/li>\n<li>Season chicken with salt and pepper<\/li>\n<li>Dip chicken in flour to dust<\/li>\n<li>Cook in oil on both sides just to sear. (Keep it on the pink side for now)<\/li>\n<li>Remove chicken to a plate<\/li>\n<li>Stir in onions and cook until tender. Stir in curry, cayenne, cinnamon and cumin and cook until aromas are released<\/li>\n<li>Stir in carrots and toss to coat<\/li>\n<li>Add chicken soup and bring to a simmer<\/li>\n<li>Place chicken breasts back into skillet and stir in broccoli<\/li>\n<li>Cover and simmer for 5-10 minutes to cook chicken<\/li>\n<li>Stir in cream and peas. Season to taste.<\/li>\n<\/ol>\n<p>Serve with basmati rice.
