The Sifrei Torah with the letters represents the korbanot that the Torah said, V'ZOT TORAT HA'OLAH or MINCHA or CHATAT, ASHAM, SH'LAMIM.The Torah uses that phrase - V'ZOT HATORAH - for a special kind of emphasis.

The animals at the bottom represent the different korbanot. When going over Parshat HaShavua with your children, wife, guests, etc. take a little time to realize that out of all the mammals in the world, these three are it. And that's all. And birds? Even more exclusive.
