SWEET CHALLAH

4 oz  fresh yeast (1/4 of 1 lb block)
3 cups warm water 
1 1/2 c sugar    
7 extra large eggs      
1 1/2 cup oil
5 lb flour   
2 1/2 Tbls salt
sesame seeds, 1 egg

Dissolve yeast in warm water; add eggs & sugar; mix.  Add part of the flour, then the salt, mix, add oil, mix until smooth.  Add as much flour as the mixer will mix without difficulty.  Place in large bowl, work in enough flour to form smooth dough, cover, let rise until doubled.  (if you want, punch down dough after 15 minutes; this makes it rise better)

Punch down dough; take “challah” from the dough, shape, let rise in greased pans.  Brush with egg, top with sesame seeds.  Bake at 350 about 25 minutes for medium challah; about 15 minutes for rolls.

Makes 6-7 medium challahs.
