Kosher Academy:
Rabbis Get Schooled in Food Chemistry

August 3, 1998 - This summer, some 60 rabbis will not be taking vacations. Instead, they will be going to school to take a course in food chemistry, modern food production and high-tech kosher supervision.

The rabbis – who hail from around the world including Hong Kong, South Africa and Israel – will take a week-long course in the ABC’s of kosher supervision during the Third Annual Advanced Seminar in Kashruth (ASK OU) Mon-Thursday, August 10-14 at 333 Seventh Avenue (Between 28th-29th Streets) in Manhattan.

Sponsored by the Orthodox Union (OU) – the world’s preeminent kosher supervision agency – the introductory course, which is geared for aspiring kosher inspectors and is the only one of its kind, will feature presentations by ingredient specialists and experts in Jewish law.

"As food production becomes increasingly sophisticated, kosher inspectors must be as versed in modern food production as they are in the Talmud," said Rabbi Joseph Grossman, Coordinator of ASK OU.

As part of the program, which is designed to provide hands-on experience in Kosher inspection, participants will get a behind-the-scenes look at kosher airline food at the Alle Processing, a meat packaging plant, and the production processes at the Oasis and McCain Citrus companies in New Jersey. Participants will also tour and learn the inner workings of the kosher kitchens at the Hilton Hotel and St. Luke’s hospital.
