Dear Rabbi Elefant,
Polite, Knowledgeable and Firm
I was recently kashering a pump in an industrial donut bakery. Water in the fryer was at a rolling boil (212°). The water then went to a holding tank and was pumped through a pump we were kashering. The exit temperature was 186°. I asked the director of sanitation (with over 30 years experience) to please raise the temperature. He responded, "Rabbi, that's the best we can do." Realizing that a 26° drop was excessive, I again asked him to raise the temperature. He got it up to 194°. "Rabbi, that's the best we can do." Again, I firmly and respectfully said, "Please do better". Again he said "No way". With a smile I asked again. Baruch Hashem with a little ingenuity he got the temperature over 200°!!!
The moral is obvious: Understanding the system, being polite but very firm, and smiling, goes a long way.
